I'm a diabetic who love's pancakes so I always try to make them as healthy as possible!. To cut the carbs I substitute some of the white flour for whole wheat and to keep them light and fluffy i use a little more baking powder than usual!. I enjoy these every saturday morning with a few Tbl spoons of Log Cabin Sugar Free pancake syrup!. Here is one that i'm sure you will love!.

1/2 cup all purpose white flour
1/2 cup whole wheat flour
1 Tbl baking powder
1/4 tsp salt
5 packets of splenda (any artificial sweetener will do)
1 Tbl canola or olive oil (both are really healthy oils)
3/4 - 1 cup skim/fat free milk
1 tsp vanilla

F!.Y!.I - instead of the using the canola oil or olive oil you may also use 3 Tbl spoons sugarfree applesauce, this will do the same job as the oil by keeping them moist!. Www@FoodAQ@Com

Low Carb Pumpkin Pancakes

(This recipe yields 2 servings) Printable Version


1 large egg
1/2 cup pumpkin puree'
1/3 cup flaxseed meal
1/3 cup whey protein powder
1/2 teaspoon vanilla extract
2 Tablespoons sour cream
2 packets splenda or equivalent
1/2 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon ground cloves1/4 teaspoon ground allspice
1/4 teaspoon baking powder
1/4 teaspoon baking soda
This recipe has about 14 net carbs per serving!.

In a medium bowl, lightly beat the egg!. Blend in pumpkin, butter, vanilla and sourcream!.

In a seperate bowl, sift together all dry ingredients!.

Combine wet and dry ingredients!. Mix well!.

On a lightly greased skillet or fry pan, dollop out about 1/3 cup of batter to make each pancake!.

This makes about about 4 pancakes!.


Serve with your favorite topping!. Be sure to make the pancakes a little smaller than usual since they're a little fragile (no flour to hold them together as well as standard pancakes)!.Www@FoodAQ@Com

Gingerbread Pancakes with Lemon Sauce

2 Cups Bisquick baking mix
1 egg
1-1/3 cup milk
1/4 cup Molasses
1-1/2 teaspoon Ginger
1 teaspoon Cinnamon
1/2 teaspoon Cloves

Mix and cook on oiled griddle!. Serve hot pancakes with cubed cream cheese and warm Lemon Sauce!.

Lemon Sauce
1/2 Cup Butter (1 stick)(No substitutes)
1 Cup Sugar
1/4 Cup Water
1 egg, beaten
3 Tablespoons Lemon Juice

Mix, cook over low heat, stirring constantly, until smooth!. Keep warm!.

mine are easy and good!.
Use dry powered milk reconstituted 1 cup
flour 1 cup
egg 1
oil 1 tablespoon
Baking power 1 teaspoon
Vanilla 1 teaspoon if you have it!.
1 cup water to two cups sugar and make your own syrup

Then dinner!? Raman noodles!.
