Is it possible that I made the best stuffing ever? And now how do I turn the carcass into soup?!
Ok!.!.!.I baked a 4!.46 pound chicken today with a tube maple sausage stuffing mixed with sauteed onions and two Boston Market cornbread loaves and I have to admit!.!.!.IT WAS INCREDIBLE!! I can't stop thinking about it even now!. It was really, really good!.!.!.
Out side of bragging, I now want I know how I turn my chicken carcass into chicken soup!. Do I just try to boil what meat is left off the bones!? Do I need to add broth!? I know I add veggies when I am nearly done boiling, but how long do I boil the carcass!? I want to use rice!. Do I boil that separately, or can I add it before I add the other veggies!?Www@FoodAQ@Com

This is the recipe I always use for the left overs of thanks giving!. It's really good, try it;

1 leftover turkey carcass
3 medium onions, chopped
2 large carrots, diced
2 celery ribs, diced
1 cup butter, cubed
1 cup all-purpose flour
2 cups half-and-half cream
1 cup uncooked long grain rice
2 teaspoons salt
1 teaspoon chicken bouillon granules
3/4 teaspoon pepper
Place turkey carcass in a soup kettle or Dutch oven and cover with water!. Bring to a boil!. Reduce heat; cover and simmer for 1 hour!. Remove carcass; cool!. Set aside 3 qt!. broth!. Remove turkey from bones and cut into bite-size pieces; set aside!.
In a soup kettle or Dutch oven, saute the onions, carrots and celery in butter until tender!. Reduce heat; stir in flour until blended!. Gradually add 1 qt!. of reserved broth!. Bring to a boil; cook and stir for 2 minutes or until thickened!.
Add cream, rice, salt, bouillon, pepper, remaining broth and reserved turkey!. Reduce heat; cover and simmer for 30-35 minutes or until rice is tender!. Serves 16!.

I am into no fuss no stress, i will agree or go along with J to a point!. i would go as far as boil the carcass, the meat will or should fall of the bone, I would just add chopped onions, carrots and celery!. let them boil to tender, then remove the carcass!. ladel out as much soup as you want into a small pot then add some rice for yourself, or for how many your serving!. Cause really the rest of the broth you can strain into plastic containers and freeze!. No adding creams and concoctions, just basics!.
