Add a cup or pint of sour cream to any cake mix and it will be super moist!.
I always spray my cake pan and dust it with granulated sugar instead of flour!. It comes out perfect every time!.
Start off with a simple cake recipe!. Try this Buttercake recipe and don't forget the sour cream!.
Butter Cake
* 1 3/4 cups all-purpose flour
* 1 1/2 teaspoons baking powder
* Scant 1/2 teaspoon salt
* 1 1/2 sticks unsalted butter, softened
* 1 cup sugar
* 1 whole large egg plus 1 large egg yolk
* 1 1/2 teaspoons grated orange zest
* 1 1/2 teaspoons pure vanilla extract
* 3/4 cup whole milk
Preheat oven to 375°F with rack in middle!. Butter a 9-inch round cake pan, then line bottom with a round of parchment paper and butter parchment!. Lightly dust with flour!.
Whisk together flour (1 3/4 cups), baking powder, and salt!.
Beat together butter and sugar with an electric mixer until pale and fluffy, about 5 minutes!. Add whole egg, yolk, zest, and vanilla and beat 1 minute!. At low speed, mix in flour mixture and milk alternately in batches!.
Spread batter in cake pan and bake until golden brown and a wooden pick inserted in center comes out clean, 35 to 40 minutes!. Cool cake in pan 10 minutes, then turn out onto a rack!.
My favorite frosting is Chocolate Mocha!
3/4 cup Crisco
1 tablespoon vanilla extract
1/2 teaspoon salt
1/2 cup cocoa powder
4 1/2 cusp confectioners’ sugar
1/2 cup coffee or 1 tablespoon instant coffee
dissolved in 1/2 cup water
Cream Crisco, vanilla extract, salt and cocoa!. Beat in confectioners' sugar and coffee!.
(If you don't want to use Crisco, use butter at room temperature!.)Www@FoodAQ@Com

Perfect name for the question : )
Not sure what you mean by Perfect, can you share what is wrong with the cakes you have made so far!?!?
High altitude will make a difference in how a cake bakes, you will need to adjust the recipe and the baking time for each recipe, You may need to experiment with what will work for your particular altitude and you can find information sources on the web!. Not all the sources will give you completely accurate information so I would suggest that you also go to your local co operative (community) and ask for any information that they have!. I have a really nice and easy chocolate cake recipe that you might want to try!. It makes a fairly small cake and so it would be easy to adjust and experiment with until you find the right recipe!. If you want it email and I'll send via emailWww@FoodAQ@Com

Make sure that you always use any "high altitude" tips included with the recipes you try!.
I've also linked some "high altitude baking tip" sites with advice for you below!.
There really isn't a "perfect" cake as far as I've found, and I always remember one of the first cakes I baked, it feel apart when I flipped it out of the pans! I couldn't frost it that way, so I put several large crumbles of it in each bowl and topped it with fruit and whipped cream!. Everyone loved it, and when I relayed this to my great aunt she told me that no one but me would know how something was supposed to look, and if people ate it and liked it I had done good! ;
Best wishes on your baking!Www@FoodAQ@Com
