Question: Cooking dinner for my boyfriend!?
I want to cook my boyfriend some dinner for our anniversary on Monday!.!. I'm a vegetarian and he's not!. I was thinking spaghetti and some sauce, some chocolate mousse for dessert, and some bread or something for a side!. Other suggestions would be nice as well, and some good spaghetti sauce recipes :)Www@FoodAQ@Com

Since you are a vegetarian and he is not I would suggest that you adjust just a little to be sure you have a complete protein for your meal!. Will you eat cheese!? Then instead of spaghetti make a lasagna

You will the following:
1 box lasagna noodles
1 onion
1 celery rib
1 carrot
1 jar spaghetti sauce
1 can diced tomatoes
1 lb mozzarella cheese grated
16 oz ricotta cheese
1 egg
2 Tablespoons parsley
fresh Parmesan cheese (purchase by the piece or already grated in the cheese section of the dairy/cheese case)


I use a purchased sauce and add to it!. Use a good brand like Ragu
Sauté a chopped onion, celery and carrot!. Add the jar of sauce, a crushed clove of garlic, a bay leaf, a tsp of basil (dry) and 1/4 to 1/2 tsp oregano (dry)!. Now add a can of diced tomatoes, drained with juice reserved!. Simmer on low heat for at least 20 minutes, add juice if it seems too thick!.

Beat the egg and mix into the ricotta cheese

Boil 9 lasagna noodles and drain
In a 9 x13 pan but about 1 C of the sauce!. Add 3 noodles to the pan laying them the length of the pan side by side!. Spread about 1/2 of the ricotta cheese over the noodles, sprinkle 1/3 of the mozzarella cheese over that and sprinkle with Parmesan cheese!. Add another cup of sauce and repeat the layers!. Add the final layer of noodles and put a layer of sauce on top of them, sprinkle with the remaining mozzarella cheese and some additional Parmesan cheese!. Bake at
350 for 1 hr or until hot and bubbly!.

Serve with a nice green salad, hot crusty Italian or French bread (or make it garlic bread)!. Have some olives, pickled peppers (like pepperacinci), roasted red peppers and provolone cheese that you can top the salad with and make it similar to an antipasto!.

You could also cook him some Italian sausage or use a vegetarian sausage to serve with the lasagna!.

Your dessert sounds good add a little whipped cream for decoration and serve with coffee!.

If you drink, you would want a good red wine but the meal is complete without any alcohol added!.

INGREDIENTS (Nutrition)
1/2 pound ground beef
1 small onion, chopped
2 (8 ounce) cans tomato sauce
1 1/2 cups water
1 1/2 teaspoons salt
1 teaspoon dried parsley
1/2 pinch dried basil
1/2 teaspoon black pepper
4 ounces uncooked spaghetti

DIRECTIONS
In a large skillet over medium heat, brown the ground beef with the onion until all pink is gone; drain!.
Stir in tomato sauce, water, salt, parsley, basil and pepper; mix well!. Heat until sauce boils!. Break spaghetti in half and drop into sauce a little at a time!. Cover and turn to low!.
Cook until spaghetti is tender, approximately 20 to 25 minutes!. Stir occasionally to keep from sticking to pan and from noodles sticking together!. Add water, 1/2 to 1 cup, if it starts to dry out and noodles are not cooked!.

You need something in the spaghetti, the best thing to make would be add Garbanzo beans!.
This is a curry like recipe!. You don't have to add all the spices, just a few you might like!. Idea is same!.
Garlic French bread or Naan will go great with this recipe!.

Cholay Spaghetti (Curried Spaghetti Ceci Chickpeas) Fusion Recipe
This recipe is based Chikkar Cholay Recipe !. I will use canned Chickpeas!. I have also modified spices and ingredients for various reasons (e!.g!., omitted Turmeric powder to prevent Spaghetti from becoming yellow)!. You may compare the differences on your own!.

Ingredients
Pre cooking Spaghetti
1!. Water: 4 Quarts
2!. Salt: 1 teaspoon
3!. Dry Thin Spaghetti: 1 Pound

Chickpea Sauce
1!. Chickpeas: 2 Cans (15 oz each)
2!. Olive Oil: ? Cup
3!. Onions Finely chopped: 1 cup
4!. Garlic: 1 Tablespoon minced
5!. Fresh Ginger ?" peeled and chopped fine: ? Tablespoon
6!. Cumin powder: 1 teaspoon
7!. Coriander powder: 1 teaspoon
8!. Fenugreek powder: ? teaspoon
9!. Carom powder: ? teaspoon
10!. Whole Fenugreek seeds: ? teaspoon
11!. Chopped Tomatoes: ? Cup
12!. Cayenne pepper: ? teaspoon
13!. Black ground pepper: ? teaspoon
14!. Salt: ? teaspoon
15!. Lime juice: 1 teaspoon
16!. Cinnamon powder: ? teaspoon
Garnish
Chopped cilantro: 2 Tablespoons

Method
Prep cooking Spaghetti
In a Large pot, add water!. Bring it to a boil!. Add salt!. Add linguine!. Stir!. Cook at rolling boil for 9 minutes or the time given on the package!. Drain in a colander!. Save ? cup of water!. We will call it 'starch water'

Chickpea sauce
1!. In a separate pan heat cooking oil!. Now we will start the Masala sauté process!.
2!. Add onions till water is gone and onions are actually turning brown!.
3!. Add Garlic and ginger!. Cook two minutes!.
4!. Add pices 6 through 10!. Cook about one minute!.
5!. Add remaining ingredients except chickpeas!. Cook about one minute!.
6!. Drain one can of chick peas!. Use food processor to grind chickpeas!. Stir in ground chickpeas!.
7!. Drain second can of chickpeas!. Stir in whole chickpeas!.
8!. Add starch water!. Cook for ten minutes at medium heat

Finish
Add precooked spaghetti!. Add chopped cilantro!. Toss around to coat spaghetti!. Cook for 2 minutes to let the flavors blend in!.Www@FoodAQ@Com

Sounds great! I would suggest a small salad or coleslaw!. I like to buy a can/jar of spaghetti sauce and doctor it up!. Do you and your bf like the chunky kind or the roasted garlic type or the traditional type of sauce!? Add veggies such as Celery, Onion, or garlic if you like chunky!.
