We just had Deer Heart a week ago!. I cut it in half and rinsed it well, trimmed off most of the fat off the top of the heart!. I sliced it thin and coated it with salted flour!. I then pan fried it til nice and brown on both sides!.
I snacked on a couple pieces while it was cooking and good thing because I got distracted right after I finished cooking it and when I returned the wife and girls had eaten it all!. No one except me jumped at eating deer liver but I think the heart was a success!.Www@FoodAQ@Com

slow cook it with a bit of water, onions and veggies!. spices like montreal steak spice work great!. the slow cooking will cause some of the toughness to go away!. just tried this the other night for the first time and actually enjoyed itWww@FoodAQ@Com
