Question: What are some yummy things to do with spinach!?
Bonjour!. (: So my mom went a bit nuts and bought a giant thing of organic spinahc, now she's NEVER going to eat it, so I think it's going ot be forced onto me!. No big deal, but I want to do something with it other than salad, any ideas!. They need to be healthy also, no frying or anything, it makes me sick!. So any ideas would be appreciated, I have other veggies if I need to use them, carrots, celery, cucumbers, tomatoes, and that's about it I think!.Www@FoodAQ@Com

When I have alot of spinach I like to make 'spinach pesto', made the same as regular pesto!.!.!. can be used on pasta, or mix with mayo!.
I also make a regular smoothie with juices, and add a handful of spinach!. Spinach has no flavor, adds alot of vitamins, picks up the flavor of the smoothie, but turns it green!. Everyone I made it for,loves it!.
also, add to a veggi lasagna instead of meat!. Make it in several layers it's beautiful and healthy!.
Put it in an omelet, with some tomato dices and a few onions and cheese!. Great!.
I also make a veggi soup, of course, spinach chopped, goes in it also!.
When i have a chicken breast, I stuff it with spinach cheese and a bit of onions, roll it secure it with a toothpick and brown it!.!.!.great!

Toss the spinach with some red onion, mandarin orange segments, and slivered almonds!. Then in a jar, mix some balsamic vinegar, some olive oil, and a touch of salt and pepper, shake it all up, and then pour onto the salad and toss!.

Pureeing it with cream cheese or sour cream makes a nice pasta sauce!.

Ruth's Chris Steak House Creamed Spinach

Love their steaks, and I love their version of this classic side dish!. Sometimes I cheat and use 2 10 ounce packages of frozen, chopped spinach which I thaw and drain!.

45 min | 15 min prep

SERVES 4

6 tablespoons butter
1/4 cup all-purpose flour
1/4 cup chopped onion
1 bay leaf
1 whole clove
2 cups whole milk
2 (10 ounce) bags ready-to-use fresh spinach
Melt 4 tablespoons butter in heavy medium saucepan over medium heat!.
Add flour and stir until light golden, about 7 minutes!.
Stir in onion, bay leaf and clove!.
Gradually whisk in milk!.
Whisk until mixture boils and thickens, about 10 minutes!.
Reduce heat to low and simmer 5 minutes longer, whisking frequently (sauce will be very thick)!.
Remove bay leaf and whole clove!.
Cook spinach in large pot of boiling water just until wilted and tender, about 2 minutes!.
Drain!.
Transfer spinach to bowl filled with ice water to cool!.
Drain well!.
Roll up spinach in kitchen towl and squeeze out as much liquid as possible!.
Transfer spinach to processor and finely chop!.
Add spinach to warm sauce, simmer over low heat until spinach is heated through, stirring often, about 5 minutes!.
Stir in remaining 2 tablespoons of butter!.
Season to taste with salt and pepper and serve!.

SPINACH QUICHE

1 pkg (8 oz!.) cream cheese, softened
4 eggs
1 cup pet evaporated milk
1/4 to 1/2 tsp!. ground red pepper
1 pkg (10 oz!.) frozen, chopped spinach, thawed and thoroughly drained
1/2 cup diced ham and/or chopped onion
1 prepared deep-dish pie crust, frozen

In a medium bowl, beat cream cheese with electric mixer until creamy!. Beat in eggs, evaporated milk and red pepper!.

Squeeze spinach between paper towels until almost dry!. Stir spinach and ham or onion into egg mixture!.

Pour into frozen pie crust!. Sprinkle with salt and pepper to taste!.

Bake in a preheated 350 degree F!. oven on a preheated baking sheet for 55 to 65 minutes, or until a knife inserted in center comes out clean!.

Makes 6 servings!.

Variation: Top quiche with tomatoes for added color!.

SPINACH SOUFFLE

2 pkgs!. chopped spinach
3 eggs, separated
1 can cheddar cheese soup
1/2 tsp!. onion powder
1/4 tsp black pepper
1/4 to 1/2 tsp curry powder
3/4 cup Saltine cracker crumbs

Cook spinach in microwave and drain well, add cracker crumbs, 3 egg yolks, cheddar cheese soup, onion powder, pepper and curry powder!.

Beat 3 egg whites until stiff and fold into spinach mixture!.

Put all ingredients into a 1 1/2 to 2 qt!. baking dish that has been buttered or sprayed with Pam!.

Top with more cracker crumbs and dot (optional) with butter!.

Bake at 350 degrees for about 45 min!.

CRAN/RASPBERRY SPINACH SALAD

1 lg!. pkg spinach salad leaves
1/3 pkg goat cheese
3/4 cup walnuts
1/2 cup dried cranberries
1 bottle raspberry vinaigrette

Divide the spinach leaves onto 4 small saucers (or plates)!.

Cut the goat cheese into small pieces (about the size of a crouton)!. Sprinkle onto of the salads!.

Sprinkle the walnuts on each salad!.

Sprinkle the dried cranberries on each salad!.

Top with Raspberry Vinaigrette!.

Note: If you want more goat cheese, walnuts or cranberries then please feel free to add them!. Enjoy!!

Makes about 4 servings!.

VEGETARIAN SPINACH LASAGNA

1 (12 oz!.) pkg!. lasagna noodles
1 (10 or 12 oz!.) pkg!. frozen spinach, thawed
2 med!. onions
8 or 12 oz!. crushed tomatoes
12 oz!. Mozzarella cheese
8 to 12 oz!. Romano cheese
2 tbsp!. olive oil
12 or 16 oz!. mushrooms
1 green pepper
Salt & pepper to taste
12 oz!. sharp cheese

Bring large pan of water to boil and add the oil!. Add noodles one at a time!. Return to boil, turn heat down to medium for slow boil and cook until done!. When cooked, drain and fill the pan with cold water and set aside!.

Grate all the cheeses!. Finely chop onion, peppers and mushrooms!. In large frying pan, heat a little oil and cook onions until translucent!. Add peppers and continue cooking for 2 or 3 minutes!. Add mushrooms and continue cooking until most of juice is gone!. Add thawed spinach and stir thoroughly!. Add salt, pepper and herbs to taste!. Oregano and thyme are good, but you can add your favorites!. Add tomatoes and heat thoroughly!.

Preheat oven to 375 degrees!. In a rectangular casserole dish, arrange sauce, noodles and cheeses as follows: layer of sauce, layer of cheese, layer of noodles!. Repeat layering until all ingredients are used -- saving some cheese for top!. Cook in oven until top starts to brown -- about 30 minutes!. Can be frozen for

MICROWAVE VEGETARIAN SPINACH BAKE

1 pkg!. frozen chopped spinach
1 med!. onion, sliced
1 tbsp!. butter
4 slices bread, cubed
1 to 2 c!. cheese, shredded
1/2 c!. sour cream
1/2 c!. milk
2 eggs, beaten
1/4 tsp!. salt
1/4 tsp!. Italian seasoning
1/4 tsp!. pepper
1 med!. tomato, chopped if desired

Unwrap spinach and place in 8 inch square microwave safe baking dish!. Add onion and butter!. Cover with vented plastic wrap!. Microwave (high) 5 to 6 minutes or until spinach is thawed!. Add bread cubes, cheese, sour cream, milk, eggs, and seasoning; mix well!. Cover!.

Microwave (medium to high 70%) 4 1/2 to 5 minutes or until edges begin to set, rotating dish once!. Stir to move cooked portion to the center, cover and Microwave (medium to high 70%) 6 to 8 minutes or until center is about set!. Sprinkle tomato over top!. Let stand covered 5 minutes before cutting into squares for serving!.

Spinach Lasagna


2 egg whites!.
26 oz of prepared spaghetti sauce!.
24 oz of ricotta cheese!.
10 oz of Lasagna noodles, cooked!.
10 oz of frozen spinach, thawed and chopped, then squeezed dry!.
2 cups of mozzarella cheese, grated, reserve ? cup!.
? cup of Parmesan cheese, grated and divided, reserve 2 tablespoons!.
? teaspoon of salt!.
? teaspoon of black pepper!.
Olive oil!.


Preheat your oven to 350°F (175°C)!.

Prepare a 9-inch by 13-inch oven proof baking dish for lasagna!.

Prepare lasagna noodles and directed on the package, then rinse and drain!.

Drizzle a bit of olive oil over the noodles to prevent them from sticking together!.

Combine parmesan cheese, ricotta cheeses with the egg whites, salt and pepper in a large mixing bowl!.

Pour ? cup of spaghetti sauce in the bottom of the baking dish and spread it out using a spatula!.

Cover the sauce with a single layer of lasagna noodles!.

Spread about half the cheese mixture over the noodles, and then cover with about half of the spinach and shredded mozzarella cheese!.

Finish this layer with half of the remaining spaghetti sauce!.

Add a second layer of noodles, topping with the remaining cheese mixture, spinach, and mozzarella cheese!.

Top with the final layer of noodles and remaining spaghetti sauce!.

Sprinkle the reserved Parmesan cheese over the top and bake for thirty minutes!.

Remove from oven and allow to set for 10-12 minutes, then slice and serve!.


Spinach Quiche


One deep nine-inch pastry shell!.
1 packet of frozen spinach, chopped!.
2 medium eggs!.
? stick of butter!.
1 cup of milk!.
1 cup of Swiss cheese, grated!.
? cup of onions, chopped!.
? cup of celery, chopped!.
? cup of cottage cheese!.
1 teaspoon of salt!.
? teaspoon of pepper!.
? teaspoon of nutmeg!.


Cook spinach in salted water as directed on its packaging; then drain!.

Sauteé the onion and celery in butter until the onion is soft!.

Spread cottage cheese over the bottom of the pastry shell!.

Mix the spinach with the onion/celery mixture and spread over top of the cottage cheese!.

Sprinkle Swiss cheese over top!.

Combine the eggs, milk, salt, pepper and nutmeg, and pour over all!.

Bake at 350°F (175°C) 45 minutes!.


Spinach Artichoke Dip


14 oz of artichoke heart!.
1 clove of garlic!.
2 cups of freshly chopped spinach!.
? cup of parmesan cheese!.
? cup of mayonnaise!.
Grated white cheese!.
Salt and pepper, to taste!.


Mix everything except the grated cheese together!.

Place the mixture in an oven-proof dish; then top with the cheese!.

Bake at 350°F (175°C) for 10 minutes or until spinach is tender and the cheese nicely melted!.
