CHICKEN TETRAZZINI

1 lb!. pasta, cooked
1/2 pound fresh mushrooms
1 stick butter
2/3 cup flour
1 large onion, sliced
5 cloves garlic, peeled and chopped
4 c!. chicken broth
2 c!. light cream
1/4 cup dry sherry
4 c!. diced chicken, cooked
1 c!. grated Parmesan cheese
1/3 teaspoon garlic powder
Salt and pepper to taste

Cook and drain pasta according to package directions!. Slice the mushrooms 1/8 of an inch thick and sauté in 2-3 tablespoons of the butter, along with sliced onion, and chopped garlic until lightly browned!. Combine the remaining butter with flour and add chicken broth, stirring over low heat until thickened!. Add the cream, salt, pepper, sherry, and garlic powder!.

Divide the sauce in half!. And one half of the chicken meat, and half of the mushrooms and cooked pasta!. Butter a casserole dish and turn the pasta mixture into the casserole leaving a well in the center of the pasta!.

Turn remaining cooked chicken half into the center of the pasta mixture!. Top with Parmesan cheese, and bake uncovered at 400 degrees Fahrenheit for 20 minutes!.

Optional: may also top with butter to breadcrumbs and grated cheddar or American cheese!.

CHICKEN FETTUCCINE

1 stick butter
2 lbs boneless, skinless chicken breast
1 cup half and half or cream
1/3 cup Parmesan cheese
1/4 cup green onions, chopped
2 cloves garlic, minced
1 T lemon juice

Melt butter in skillet and saute chicken which has been cut into 2 inch chunks!. When chicken begins to take on color, add garlic and green onions!.

Add remaining ingredients except lemon juice, cover and simmer over low heat until mixture thickens and chicken is tender!.

Serve over cooked and drained fettuccine!. Sprinkle with lemon juice and additional Parmesan cheese if desired!.

GINGER SESAME CHICKEN WITH BABY SAGE
POTATOES

Marinade:

1/4 cup wine vinegar
1 tablespoon soy sauce
1/4 cup olive oil

Chicken and Potatoes:

6 boneless, skinless chicken breast halves
1 cup Paul Newman's Own Low-Fat Sesame Ginger Dressing
3 cloves garlic, minced
1 shallot, chopped (optional)
sea salt and pepper, to taste
olive oil spray
6 baby potatoes
rubbed sage

Marinate chicken in refrigerator for 30-60 minutes in wine vinegar, olive oil and soy sauce!. Discard marinade!.

Place chicken in an ovenproof baking dish and brush generously with 1/2 cup Newman's Own Low-Fat Sesame Ginger Dressing!. Sprinkle with minced garlic and shallot!.

Scrub baby potatoes and remove eyes!. Quarter or cut into halves (depending on size) and spray with olive oil spray, then sprinkle with a light dusting of rubbed sage, sea salt and pepper!. Arrange potatoes around chicken in baking pan!. Spray potatoes with additional olive oil spray during cooking if they become dry!.

Roast at 325°F for 20 minutes, then baste with remaining Sesame Ginger Dressing; turn oven to 375°F and continue to cook until juices run clear, about 10-15 minutes more (depending on size of chicken pieces)!.

CHICKEN CHILAQUILES

6 tortillas
1/3 chicken, cooked
2 hard boiled eggs, chopped
1 cup chicken broth
4-5 fresh chives, minced
2 radishes, minced
1 onion, minced
1 stem coriander
1 green chili pepper, chopped
2 green tomatoes
about 1/4 cup oil
1 pkg cream cheese
oil for deep frying

Heat oil to 365°F!.

Cut tortillas into wedge shapes (or quarters)!. Fry in hot oil until lightly golden!. Drain on paper towels and set aside covered with a cloth so they won't dry out and will stay warm!.

Meanwhile, in a skillet, cook tomatoes and mash with coriander, chili pepper and onion!. Add a few tablespoons of oil and fry until very hot!. Reduce heat; add chicken broth!.

Pour 1 tablespoon oil into a baking pan and line with 3 tortillas!. Spread a layer of cream cheese, add a layer of chicken, then half of the sauce!. Cover with the remaining tortillas, then repeat with a layer of cream cheese, chicken and sauce!. Remove from oven and sprinkle with chopped boiled eggs before serving!.

Bake at 325°F for 30 minutes!.

steak and ale pie =) its what i'm making
i dont know how much i use of anything its all sort of free hand!.!.

one pack of already diced steak or cut it yourself!.!.
some beef stock or oxo's i like the oxo's instead of beef stock cube made by knor!.
two carrots
potatos
mushrooms
onion
garlic
guinness
flour
pastry
cook onions till sort of see through, then add garlic if you like it
then let cook a little longer!.
put in a cup and move to the side
add steak to the pan and brown, then add the onions back to the pan!.!. its just so it doesnt go more boiled than brown (depends on the pan you have)
then add 2-3 spoons of flour plain or corn flour but i had to use self raising because i ran out =P then when its all gloopy add a can of guinness!.!.
then mix the oxo's in a jug with some water and add to taste =)
let it boil down so its not to watery
add your potatos (i like whole new potatos)
and carrots and cook them
then add the mushrooms and cook a little and put in the oven dish add your pastry!.!. i like puff pastry =D and cook in the oven until brown and it looks all yummy!!

sounds like it takes ages but i really love it!. you can do some chips in the oven at the same time as the pie =D

im having acrispy chicken, mashed potatoes and corn!.
Im also having rice pudding for dessert!.

-tacos--include lettuce, olives, cheese, tomatoes++more!
-pizza
-Fish--with a side of some pasta
-Steak--with corn and mashed potatoes and maybe some fruit
-Hamburgurs-make some homade fries and fruit to go along!
-soup-chicken noodle, vegetable, potatoe+ many more-make sure to include dipping bread!.

mac n cheese with an italian twist

all u need is

1 jar of tomato paste

1 box of cooked penne pasta

1 bag of shredded cheddar cheese

1 cup of grated parmesan

in a large pot, combnie all ingredients, and bake in the oven at 350 until crispy and crunchy on the top
