I almost ate the whole turkey but...?!


Question: I almost ate the whole turkey but!.!.!.!?
!.!. there are some left overs, that have sort of gotten dry what can I do with them, other then leaving them in the fridge until they get thrown away!.!.!. something easy without too much detail would be great!.!.!.nothing too spicy 5 year and 18 month old in the house!. ThanksWww@FoodAQ@Com


Answers:
Chop the turkey into bite-sized pieces!. Add a lot of mayonnaise to really moisten everything!. Then add what you think the kids would like -- celery, carrots, onion, etc!. They probably won't like onion, but hopefully celery and carrots, cut into small dice!. Add a little salt and pepper and mix everything well!. Either serve as a turkey salad sandwich or serve over lettuce with hot rolls and butter!. This is one of our favorites with left over turkey and I make it every year -- made it yesterday in fact !!!Www@FoodAQ@Com

my dad always makes turkey soup!.!.

he takes all of it and puts it in a big pot with onions and garlic and boils it all off the bone!.!. then go through it to pick all the bones and suff out!.!. you can strain it with a siv if you have one!.!. pick all the meat out and put it back into the bowl!.!. add potatos and carrots and anything you like in it, you might need some chicken stock cubes as i found it to be kinda bland!.!. and then near the end add a little cream =) thats it =)Www@FoodAQ@Com

LEFTOVER TURKEY

White sauce
4 tbsp!. butter
6 tbsp!. flour
2 c!. milk
2 tsp!. salt
1/4 tsp!. pepper
1/2 tsp!. celery salt (optional)
Leftover turkey
1 lg!. onion, chopped
Chopped celery

Place leftover turkey in buttered casserole dish!. Add finely chopped onion and celery!. Season to taste!. Pour over mixture the white sauce and top with grated cheese and bread crumbs!. Bake at 350 degrees for about 30 minutes or until heated through and crumbs and cheese have browned!. This is great! No measuring, it's easy and quick!.

LEFTOVER THANKSGIVING TURKEY
ENCHILADAS

Leftover cooked turkey (white or dark meat pieces)
1 or 2 cans cream of celery soup or cream of chicken, cream of mushroom (whichever suits your taste)
1 can diced green chilies
1 reg!. size pkg!. plain tortilla chips, crumbled
1 (8 oz!.) pkg!. Cheddar cheese, grated
1 (8 oz!.) pkg!. Monterey Jack cheese, grated
1 sm!. onion, chopped
1 jar jalapenos (optional)

Saute onions in butter in medium skillet until golden brown!. Add green chilies, soup, and 1 soup can of water!. Stir and simmer until heated!. Crush tortilla chips, using 1/2 of package!. Spread a layer in bottom of baking dish!. Evenly place a layer of cooked turkey on top of chips!. Spoon a layer of 1/2 of soup mixture over chips!. Add jalapenos, if desired!. Sprinkle with 1/3 of both grated cheeses!. Repeat chips, turkey, and soup mixture; top with grated cheese!. Quantity is determined by the amount of turkey available!. For larger amounts, simply continue to layer ingredients!.

Conventional Oven: Bake in oven at 350 degrees until thoroughly heated and cheese is bubbly!.

Microwave Oven: Heat at medium high power until thoroughly heated and cheese is bubbly!.

LEFTOVER TURKEY OR CHICKEN POT PIE

Leftover chicken or turkey, diced
Leftover vegetables
1 can cream of chicken soup
Prepared gravy mix

Mix all ingredients together!. Pour into pan!. Cover with biscuits!. Cook until brown!.

"LEFTOVER TURKEY" SOUP

Leftover turkey from 1 turkey
1/4 tsp!. poultry seasoning
3 cubes or 3 tsp!. chicken bouillon
1 bay leaf
6 c!. water
1/2 c!. rice or 1 c!. noodles
3 med!. carrots
2 stalks celery, sliced
2 med!. onions, sliced or chopped
2 tbsp!. chopped parsley
1 sm!. can tomato sauce

In a large saucepan or pot combine first 5 ingredients!. Simmer covered for 1 1/2 hours!. Remove bones, cut off meat and return meat to broth!. Add remaining ingredients to broth!. Simmer covered 30 minutes or until vegetables are tender!.

TIP: Other vegetables may be added such as corn, zucchini, tomatoes, potatoes, peas, mushrooms, pick what you like!.

TURKEY LEFTOVER SURPRISE

1 (6 oz!.) pkg!. UNCLE BEN'S? wild rice
2 tbsp!. butter
1 lb!. sausage
3 c!. leftover turkey, chopped
2 cans mushroom soup
1 can mushrooms

Cook rice according to package adding 2 tablespoons butter!. Saute sausage and drain!. Layer ingredients twice in this order sausage, turkey, rice, soup and ending with mushrooms!. Bake in a 400 degree oven for 20 minutes!.

LEFTOVER THANKSGIVING TURKEY PIE

1 c!. flour
1 c!. milk
3 tsp!. butter
2 c!. diced turkey
1 pkg!. frozen mixed vegetables
1 can whole kernel corn
1 can tiny English peas
1 can mushroom soup or cream of chicken soup
1 sm!. can potato sticks
1 sm!. can mushrooms (optional)

To make the batter for the pie, melt the butter in a large, flat pan sometimes used for sheet cakes!.

Mix together the flour and milk!. Mixture will be lumpy, but this is normal!. Pour mixture into pan on top of butter; set aside!.

Next cook 1 package of frozen mixed vegetables!. Add 2 cups of diced turkey, can of soup, can of corn, English peas and small can of potato sticks!. Mushrooms are optional, but tasty! Stir together and pour mixture onto batter!. Put the majority of the mixture in the middle because it will even out as it cooks and the crust bakes around it!. Cook at 350-375 degrees for about 30 minutes!.

LEFTOVER TURKEY DISH

2 tbsp!. butter
1 tsp!. minced onion
1 tsp!. green pepper
1/2 c!. sliced celery
2 c!. chopped turkey
1 can cream of chicken or mushroom soup
3/4 soup can milk
Salt and pepper to taste

Brown onion, green pepper, and celery in butter in heavy skillet!. Simmer about 5 minutes, then add turkey, soup, milk, salt and pepper to taste!. Simmer 20 minutes, stirring once in a while!. May be served on hot biscuits, toast or buns!. Very good!
