If I am making homemade mac and cheese starting with my roux of butter and floor do I then just melt the ?!
cheese into the roux with some milk!? And then bake it with seasoned bread crumbs on top that is how my Grandma used to prepare it I'm trying to duplicate hers!? Suggestions!?Www@FoodAQ@Com

Melt your butter, add your flour!. Let cook 1 min (do not brown), then add HOT milk, whisking constantly!. When thick, remove from heat, add shredded cheese(s), along w/ S&P, maybe a little nutmeg!. Stir into hot cooked pasta!. Eat as-is or bake if you want it crusty on top!.

I used to make it that way too!. Then I noticed that if I melted about 1/2 the cheese into the milk mixture before I poured it on the cooked macaroni, I got more cheese flavor through the whole casserole!. So here's my recipe:
12 oz large elbow macaroni - cooked al dente and drained
2 T butter, melted - add 2 T flour and cook until lightly browned, Then add 1 cup whole milk, wisking constantly to avoid lumps!. Once it is a nice consistency, add approximately 1/2 to 1 cup shredded Sharp cheddar cheese (I have also used 1/2 smoked chipotle cheddar and 1/2 regular sharp cheddar for a kick!)
Lightly oil or butter casserole, add 1/2 macaroni and 1 Tbsp minced onion!. Sprinkle on 1/2 cup of the cheese, and pour over 1/2 of the melted cheese mixture!.
Do the same with the other 1/2 of the ingredients!.
Melt a little butter (about 2 Tbsp and stir in about 1/2 cup panko bread crumbs) Sprinkle over the top and bake at 350 degrees (F) for approx 1/2 hour!.

Once you have your butter and flour all nicely combined, pour in the milk only!. Heat gently and stir all the time preferably with a wooden spoon!. This is time-consuming but you slowly bring the milk to nearly boiling, the odd bubble will start to appear (keep stirring!) and your sauce will quite suddenly start to thicken!. Reduce heat but add the cheese and keep stirring until it's all melted and looks smooth!. ( If it seems too thick you can add more milk but I often find I have a vast quantity of sauce that way!) You melt the butter, add the flour, cook gently for 1 minute, add the milk gradually, stirring hard cos it will go lumpy each time you add a bit!. Once all the milk's in and you've brought your unlumpy sauce to the boil, switch off the heat and add the grated cheese!. Then mix it with the cooked macaroni and sprinkle breadcrumbs on!.

You've got it!. That's how I do it!. Make sure to cube the cheese so it doesn't take forever to melt!. Keep stirring!.

add the milk until you get the desired thickness!. then slowly stir in cheese(shredded fine) on a low heat!. the high heat can scorch dairy products easily!. then slowly add a pinch or two of corn starch!. The corn starch will keep the cheese from being stringy/lumping!. I usually use a heavy whipping cream instead of doing a rue!.!.!.but both works!.Www@FoodAQ@Com

OK I think your Grandma added FLOUR not FLOOR to it!. That would be a good start to duplicate it!. Add milk then cheese!.!.!.!.!.you want to thin the roux to incorporate the cheese, if you do it in reverse it will seize up and turn to a lump!.Www@FoodAQ@Com
