Stuffing cornish hen?!


Question: Stuffing cornish hen!?
I am making a mixture of feta, some fruits/nuts/seeds to stuff two hens with!.!.!. just wondering!.!. Should I stuff them before I bake them, or should I wait until after and let the heat from the chicken do its thing!. Considering nothing in the mixture has to be cooked!.!.!. Www@FoodAQ@Com

Since the cheese will melt easily from the heat from the hens, perhaps you should stuff them when they are finished! This way there will be no cross contamination if the feta cheese stuffing does not get to 165 when the hen is done!. (165 is the temp that kills all the germies like salmonella)

If you try to cook until the middle registers 165, then the meat of the hen will be too dry as it will end up being around 180 or so! also, there's the risk that the cheese would melt and run out of the hen before the cooking time is over! D:Www@FoodAQ@Com

You must stuff them before you cook them!. Using a meat thermometer, the stuffing should register 165 degrees!. You cannot not stuff them after they are cooked and let the heat from the chicken "do it's thing", or there is a possiblity that you will get sick!.Www@FoodAQ@Com
