Answers:
Sherry - medium dry about 6 to 8 on sugar content!.
Add a couple of ounces and taste it!.
Other suggestions:
dash of worchesthire to pick up the taste
chicken broth
ground pepper
Mine is half beef broth and half chicken and it is very tasty- more subtle less beefy!.Www@FoodAQ@Com

it depends on what kind of sherry and what kind of red wine it is!.!.!.!.!.!.!.some will go good, others won't!. EVERYONE that has answered so far is right to a degree, but if you don't use he proper wine or sherry, it won't turn out at all!. I would suggest the sherry, you'll wanna go with a Medium Dry SherryWww@FoodAQ@Com
If using sweet onions for the soup I would go for the red wine, not to much though but enough to say, hum that is great!!. If using brown onions I would go for the sherry, which is a bit sweeter and would lend to fantastic flavor!. I would stay away from the beer, not a good combo!. Www@FoodAQ@Com
I like to use a dry red wine in mine!. I love pinots and merlots!. I think you should cook with what you like to drink!. And the answer that said it depends on what kind of sherry or wine it is is very important!. Some sherry can be very sweet, same for wine!.Www@FoodAQ@Com
Sherry would be delicious!. Depending on the type of beer you have, that could be very good too!. I doubt a domestic beer would add much flavor, but a nice stout ale would add a nice kick!.Www@FoodAQ@Com
i donno, make the soup then pour 3 little bowls and put different alcohol in each!. i'm guessing its preference!.!.!.since the whole concept sounds disgusting to me!. but that is what i would do - experimentWww@FoodAQ@Com
Put some soup in a spoon and add a drop or two then taste to see what one would work best before adding to the pot!.Www@FoodAQ@Com
