Question: Parmesan crusted chicken you !?
i'm looking to make parmesan crusted chicken for dinner tonight, and i'm hoping to not have to bake if that's possible!.!.!. unfortunately all the recipes i came up with included baking and many needed wax paper and crazy ingredients (one even called for shallots)!. any suggestions!?Www@FoodAQ@Com


Answers:
Parmesan Fried Chicken (This is for chicken tenders, but could be modified for larger chicken pieces)!.
1 cup grated kraft parmesan cheese
1 tablespoon garlic powder
2 eggs
1 lb boneless chicken tenders
olive oil, to fry
Pour olive oil into skillet and heat over medium heat!.
Beat eggs lightly in a medium bowl!.
Mix together parmesan cheese and garlic powder on a plate!.
Dredge chicken in beaten egg!.
Place chicken in cheese and garlic mixture and turn to coat thoroughly!.
Pan-fry chicken in olive oil until lightly browned on both side and no longer pink in the center, about 3 minutes per side!.

* 3/4 cup finely chopped fresh Italian parsley (or 1/4 cup dried parsley flakes)
* 2/3 cup plain (or Italian) dried breadcrumbs
* 1/2 cup shredded Parmesan cheese
* 1/2 teaspoon ground pepper
* 1 tablespoon finely chopped lemon zest
* 4 skinless and boneless chicken breasts
* Canola or olive oil cooking spray

1!. Preheat oven to 450 degrees!. Cover a 9 x 13-inch baking pan with foil; coat the foil with canola cooking spray!.
2!. Add parsley, breadcrumbs, Parmesan, pepper, and lemon zest to medium bowl and blend well!.
3!. Press both sides of each chicken breast in breadcrumb mixture, and place in prepared pan!. Coat the top of each crusted breast lightly with cooking spray!.
4!. Bake until the chicken is completely cooked through, and the tops and bottoms are lightly browned (about 25 minutes)!.Www@FoodAQ@Com

The only semi-difficult thing is pounding out the chicken breasts!. I actually put them inside a plastic baggie and have used everything from a sturdy coffee cup to a beer bottle to pound with!. Don't skip this step!. It's worth it & makes them really good & crispy!.Www@FoodAQ@Com

i use boneless skinless chicken breast!. i pound them slightly!.!.!.

i coat put them in milk then coat them with parmasian cheese and breadcrumb mixture!.!.!.( more cheese then breadcrumbs) but i use it to make a good coating!. as far as the seasonings go i use what i want!. my faves are garlic powder, italian seasoning, black pepper and sometimes for a little spice crushed red pepper!. !.!.

make sure oil in pan is nice an hot before putting coated chicken in so it dont stick to much!. let it cook for about 4-5 min each side!.!.!.!.!.cut corner off to see if tis done if stil little pink cook a little longer!.!.!.

make some rice or noodles for side dish!.

shallots are only if you want!. use only the seasonings you like!.!.the ones in recipes are the ones they like or use most!.Www@FoodAQ@Com

well shallots can be replaced easily by onions or garlic or both if u wish, u dont have to use wax paper, just try non stick cooking spray or spread oil or butter on the pan, pan fry the chicken first then finish it off in the oven so its not in the oven too long!. Its just safer to bake it since its meat!. But pounding out the chicken to be thinner will make it cook faster in just a pan, however its more work!. Its up to youWww@FoodAQ@Com
