Butter creme cake icing?!


Question: Butter creme cake icing!?
I would like to make small little butter creme cakes for christmas !. I know its traditional for weddings but its so good! please helpWww@FoodAQ@Com

I usually do this my mixing up a white cake box mix - I prefer duncan Hines!. Then I bake it in 2 13x9 pans - just grease flour pans and pour half in each pan!. Bake for 15 min or until edges begin to pull away slightly from sides!. !. but try not to over cook!.!.

Then loosen them in pan by gently running spatula around edges!. Then stick in freezer til frozen hard!!

Mix up your butter cream frosting -
I use a cube of margarine beaten with my mixer into a pound of powdered sugar then add 1 t vanilla and a few drops of whipping cream!. Just get a half pint because unless you are doing a lot it will only take a tablespoon or 2!. Just keep beating and adding a teaspoon or so of whipping cream (unwhipped) to the frosting til it is a good creamy spreading texture!.

Then you can divide and tint it with food coloring - I prefer the wilton paste colors as it doesn't make frosting too runny!.

Then remove cakes from freezer - pry out of pan gently and lay on a cutting surface - take your hands and brush any loose crumbs off and get them away from frosting area - Now if you want them to be 2 layers - put in your filling - strawberry or your fav flavor of jam - spread evenly over and stack one on top of other!. Then cut them in little squares!. Return to freezer till they are firm again if they have started to soften at all!.

Then when froz hard again, Take a few squares out at a time and frost them - you can thin your frosting so it will just pour over them but I think it is too messy and wastes a lot of frosting too!.

Once they are frosted then you return to freezer!. Then if you have tinted some of the frosting you can make little lines to form decorations or squeeze it out in a little flower or leaf if you have frosting bags and tips!. Sometimes we put a small piece of candy on it for decoration, too!.

Oh on the filling - sometimes I melt hershey bars and spread over and sometimes we use flavored frostings inbetween - like mint!. We love pineapple jelly for a filling too!.

Looking for an easy recipe!?

The recipe on the back of Rogers Icing Sugar package is good!.
Cream 1/2 cup soft butter with 2 cups icing sugar!. Beat in 2 tsp vanilla extract, 2 tbsp milk and 1 cup more icing sugar into the mixture!. Gradually add 1-2 tbsp milk into mixture until smooth!. For chocolate icing, add 1/3 cup sifted cocoa powder!. Www@FoodAQ@Com
