Can someone tell me how to make Beans spicy?!


Question: Can someone tell me how to make Beans spicy!?
You know, typical homeade beans (pinto)!. But like restaurant style, i think they use green chili!. I have an idea but is there any specific instructions on timing, preparing, and cooking!?Www@FoodAQ@Com

Some cooks add one can of Ro-Tel Tomatoes (with chiles) to their pintos while they're cooking, so that the beans are totally infused with the flavor!.

Pick over and wash one pound of dry pinto beans and place in a slow cooker!. Add one whole clove of garlic, slightly crushed, one teaspoon salt, one or two celery stalks, (or hearts) four or five whole peppercorns, one bay leaf, the can of Ro-Tel and a chunk of bacon/ham/hog jowl slightly smaller than the size of a pack of cigarettes!. Cover with water until the water is 2 inches above the beans!. Add more water as needed!. Cook on Low for 24 hours!.

Mash some cooked beans and their juices in a skillet and bring to a boil!. Add the mixture back to the large pot of cooked beans!.

Call me, and serve!. Don't forget the cornbread!Www@FoodAQ@Com

follow your refried bean recipe as normal and at the end add salsa to the mix that is what several restaurants did i have worked at in the past!.Here's a recipe from my cook book!.

Dutch oven Refried Beans
"Cast Iron Covered Wagon Cookin'" by David Herzog

2 cups dried pinto beans
1 cup dried kidney beans
? cup dried black beans
6 cups water
1 can chicken broth
1 medium onion, diced
1 Tbs!. dried oregano
? tsp!. cumin
1 Tbs!. fresh garlic, chopped
? cup mild to medium salsa
Salt and pepper to taste
2 Tbs!. butter or lard

In a Dutch oven, combine beans, water, and chicken broth!. Bring to a boil, and reduce heat to a slow boil, cover and cook for 2 to 3 hours, adding more liquid as needed!. Uncover after beans are tender and continue cooking to reduce liquid, about 30 minutes!. Add onion, garlic, oregano, and cumin!. Simmer 15 to 30 minutes!.
Pour off liquid until about 1 cup remains, then with a potato masher, mash the beans until mashed almost smooth!. Add salsa and butter or lard, cook over low heat 5 to 10 minutes!.
Serves 6 to 8

I love to enjoy traditional Mexican foods, with great refried beans as one of my favorites!. Most refried bean recipes are loaded with fat (thus refried) for flavor!. By adding salsa and using chicken broth, the fat in this recipe is greatly reduced and flavor is increased ten fold!. Serve this recipe without mashing the beans, keeping the broth, and serving over a bowl of rice for a great beans and rice main course!.

Ghetto Frijoles

Ingredients:

2 lbs!. pinto beans (soaked overnight)
2 medium white onions, peeled and chopped
8 large garlic cloves
2 tablespoons crisco
2 bay leafs
1/2 lb!. bacon, diced
4 tomatoes, chopped
6 serrano chiles, chopped
salt to taste

Preparation:
Toss everything into a crockpot
let er rip all day
Taste for salt!.

Crockpot Beans
If you want beans to pack for lunch:
Before you go to bed, rinse beans, pick out any small rocks!.

No soaking required!.

Put two cups of beans and five cups of water in crockpot!. Cook on low over night!. (Soybeans and chickpeas need to be cooked on high)!.

Beans should be tender in the morning!.

To have them ready for dinner, just put in the crockpot in the morning!.

You can add some chopped onions and garlic for flavor!.

Bonus Tip: Freeze them in 2-cup portions in zipper-type freezer bags or semi-disposable storage containers!. One bag/container equals 1 can of beans!.

If you want to cook a whole pot of refried beans:
Refried Beans
5 cups pinto beans
4 cups chopped onions
1/4 cup chili powder
2 tbsp salt
1 tbsp pepper

I buy it from Amazon!.com, but local stores probably carry it, its the best hot sauce I've found!. I flavor the beans with it after its cooked, start with a small amount, its powerfully hot!

Rinse and sort beans and add to crockpot with onions!.

Cook on high all day, or until beans are soft!. Drain the beans and onion mixture, reserving some of the liquid!. Puree in food processor (or mash with a fork) with remaining ingredients to desired consistency!. Thin with cooking liquid if needed!.

Mmmm!.!.!.green chilies are really good,but if you have none availible,try adding some sriracha(that is how its spelled) garlic and chili sauce to your recipe,right when you mix all the ingredients together,before cooking them!.You have to taste the chili sauce by itself (it is kinda hot but has that savory garlic flavor too) and determine how much you want to add by the size of your bean pot!.Cook as you would,and then invite me over for dinner!Www@FoodAQ@Com

If you are making refried beans you either need to start with cooked canned pinto beans or cook pinto beans til done before you begin!. Then you just beat with your mixer and add salt, diced green chiles and hot chile powder!. You can add fresh black pepper for more spice, and my husband mixes Tabasco in his, too!. We like them with a slice of cheese melted over top!. Once all ingredients you want to use are mixed in - put in lightly greased frying pan and heat thoroughly then lay slices of cheee if you'd like over the top!

when you're cooking beans almost at the end you can add jalapenos and jalapeno juice to your liking!. if they are cooked and you are going to re fry them you can add hot pepper flakes and they taste awesome!.Www@FoodAQ@Com
