ok so i used to live in Georgia , and honestly i miss the food found there(sighs) anyway this weekend when i am off from work i would like to cook a good southern dinner i would like it to be relatively easy so i don't want like a 105 step process side lol!. i know i want to make fried green tomatoes but that's all i know, i would like another side, main dish and desert!. so if anyone has any ideas it would be very much appreciated there's no occasion so it doesn't need to be extravagant!.Www@FoodAQ@Com

Hey here is a easy dinner to prepare!.!.I qualify born in Virginia
First "ham" is one of the most popular and important meats in the south the "piggy" feeds everyone with all it's parts but the OINK!.!.!.that is the only part I think never goes in the pot!.

First check the newspaper and see if anyone has ham on sale if so get the shank end it's usually cheaper and the taste is as good as any other cut!. A smoked sugar cured ham would be the most desirable!. Bake the ham about 20 minutes per pound in the oven as directed on the label!.

In the mean time wash and poke 3 holes in each one and then bake enough whole sweet potatoes to feed you and yours!.!.!.!.usually 1 per person will do if large!. when they are fork tender remove from oven and let cool!. When you can handle them peel and cut in half then place in buttered casserole dish!. On top of the stove i n small pot place 1/2 cup butter, 1/2 cup brown sugar, 1/2 cup orange juice , 1 tsp!. cinnamon, pinch of cloves and nutmeg!. Mix together and cook for 2 minutes then pour over sweet potatoes!. Place in oven and bake until syrupy and has a candied look to it!.

Green beans
Usually southerners cook with meat like ham or fresh pork!. Take some of the baked ham chop into cubes and cook with fresh green beans or canned!. Add black pepper no salt and enough water if fresh to cover the beans and bring to boil simmer until everything is fork tender!.

To top off the dinner make some cornbread
purchase a mix or make it from scratch

For dessert a banana pudding is a great southern treat
all you need are about 3 or 4 large bananas
vanilla wafers, vanilla pudding and meringue for the top
Line a casserole dish with vanilla wafers top with bananas, pudding and repeat until all is used then at the top place meringue and bake for about 10 minutes until golden brown!.

Just about every southerner I know drinks iced tea not plain but sweetened!.!.so make sure you have plenty to pass

Ingredients

* 2-3 lbs frying chickens, cut up
* 2 cups buttermilk
* 1 cup all-purpose flour
* 2 teaspoons salt (or to taste)
* 1 teaspoon black pepper, Freshly ground (or to taste)
* 1 teaspoon paprika
* 1/4 teaspoon garlic powder (optional)
* 1/4 teaspoon onion powder (optional)
* vegetable oil (for frying)

Directions
ButterMilk southern fried chicken
1!.
Wash chicken pieces thoroughly and pat dry!.

Place chicken in a long, shallow glass baking dish!.
3!.
Pour the buttermilk over the chicken, cover and refrigerate for a least 4 hours, turning once or twice!. In a clean plastic or brown paper bag, combine the flour, salt, pepper, paprika, and if desired the garlic and onion powders!.

Drain the chicken and place two or three pieces of chicken in the bag and shake well to coat evenly!.
5!.
Repeat until all chicken has been coated with seasoned flour mixture!. In a large, heavy skillet, heat about one-half of oil over medium-high heat until hot, but not smoking!.

Add chicken (in batches if necessary) and brown on all sides, about three minutes per side!. Place browned chicken on a warm platter until all pieces are cooked!.

When all the chicken pieces are browned, crowd them into the skillet, turn heat to medium-low, cover and cook, turning occasionally, until tender, about 35-40 minutes!.

Remove cover, turn heat to medium-high and cook six to eight minutes more or until skin is crispy!.

Serve at once!. Serves 4!.

chicken marinated in butter milk
dip chicken in flower ( use some salt and pepper to taste)
fry chicken in oil



mashed potatoes

boil idaho potatoes
drian and mash potoates
add some butter
add some milk
mix together and serve


fried corn/collard greens

melt some fat back
add the corn and or greens and fry until they are slightly golden brown!.!.!.!.!.

Well in my opinion, if you want to have a true southern dinner then the following should be on the menu:

Southern Fried Chicken
Macaroni and Cheese (not the stuff in the box, the real deal)
Fried Green Tomatoes
Collard Greens
Bread Pudding or Apple Pie

Here are a few recipes to get you started these are super easy!.

Southern Fried Chicken

3 lbs chickens, cut up
1 cups buttermilk
1 tablespoon seasoning salt (may also use regular salt)
2 eggs
1 cup all-purpose flour
1 teaspoon black pepper (or to taste)
2 teaspoons salt (or to taste)
1 teaspoon paprika
1/4 teaspoon garlic powder
1/2 teaspoon dried sage (may use bell seasoning or some dried oregano)

vegetable or canola oil (for frying)

Wash chicken pieces thoroughly and pat dry!. Mix buttermilk, eggs and seasoning salt and dip chicken pieces in this mixture!. combine the flour, salt, pepper, paprika, garlic and dried sage in a large bowl!. Take each piece of chicken out the buttermilk mixture and coat evenly with the seasoned flour one at a time!. Heat a shallow layer of oil in a jumbo chicken skillet (cast iron is great for this job) or an electric skillet!. Place the chicken in the pan, trying not to crowd the pieces!. Cover for the first 5 minutes (this is to speed up the cooking process and to make sure it cooks all the way through) remove the cover after 5 minutes then continue frying and turning fregquently for 10-15 minutes until chicken is golden brown and full cooked!.


Macaroni and Cheese

4 cups cooked elbow macaroni, drained
2 cups grated cheddar cheese
3 eggs, beaten
1/2 cup sour cream
4 tablespoons butter, cut into pieces
1/2 teaspoon salt
1 cup milk

Preheat oven to 350 degrees F!.

Once you have the macaroni cooked and drained, place in a large bowl and while still hot and add the cheddar!. In a separate bowl, combine the remaining ingredients and add to the macaroni mixture!. Pour macaroni mixture into a casserole dish and bake for 30 to 45 minutes!. Top with additional cheese if desired!.Www@FoodAQ@Com
