Need some ideas on what to pack for husbands lunch?!


Question: Need some ideas on what to pack for husbands lunch!?
I know he appreciates my sandwiches (lol) and doesnt mind eating them everyday, but i need some new ideas! i want to change it up so he's not eating a ham, tuna and turkey sandwhiches everyday!. Now!.!.!. he won't eat things like wraps, pretty much any kind of fruit unless its a fruit cup, granola bars!.!. basically the "healthier stuff"
ideas needed please!! anything would be great!

My husband has taken his lunch for 40 yrs lol - They do get tired of sandwiches!. One thing that helps on sandwich filling though is if you add some 'stuff'!. !. like finely sliced celery, onion, pickle, diced apples and to his tuna sandwiches I add chopped nuts - either peanuts or cashews!. also on turkey sandwiches you can slice the turkey up in little chunks add celery, onion, nuts if you like and mix it all with mayo just like you would tuna!. I always put any lettuce (he likes it on tuna) in separate sandwich bag right next to the cold pack so it stays crisp and he just adds it to sandwich when he eats!.

Other things I've done in the past are I have sliced summer sausage, hard cheese (he likes med sharp cheddar) and put a cup or more depending on appetite of each in sandwich bags to eat like finger food tho I do put a fork in and then another sandwich bag of his favorite crackers!. You can also take smoked turkey slices - spread it with soft creamcheese and chives (the come in a tub near cream cheese at groc store) and then I roll them up and again include a bag of his fav crackers!. He likes this with ham and the cream cheese that is mixed with pineapple too!.

In the winter time, I use a wide mouth Stanley thermos and pack chunky soups, stew, stroganoff, spaghetti (do whack up the spag noodles or it is awkward to eat with a spoon), even tamales -after heating take off the wrap so they don't have to fight with it lol and the trick is the Stanley brand of thermos - and filling it with very hard boiling water - letting it stand with the boiling water inside for 5-6 min and then bring your hot slurpy food to a rolling boil - though I do that in the microwave - just add a bit of water so it doesn't dry out - lol and make sure it is very hot all the way through - I usually stir it after 3-4 min in microwave and heat in 2 more min!. Then dump into the thermos and do not forget to pack a spoon lol!! :) I try to put crackers or buttered bread etc in to 'eat' with it!. It will stay very hot and if he is at a desk you could include a bowl to pour it into!.!.

To keep things cold I found cold packs that fit in the bottom of his lunch box fairly well at Walmart in the camping area!.!. I have 2 and you just put them in the bottom of the lunch box and lay the things that need to be the 'coldest' on them and put other things on top!.

I do try to include complimentary foods or things he likes with whatever he is taking for the day!.!.

I also bake quite a bit and so he has goodies fresh (mostly lol) and then sometimes I will put in those little packets of crackers and cheese or really splurge and give him twinkies lol!

Easy Sandwiches

Ingredients
Cream cheese
Chopped dates
Chopped peanuts
White breads (slices)

Action
a!. Butter the white breads!.

b!. Top with cheese, dates,
and sprinkle with peanuts!.

Sandwiches Rolls

Ingredients
Mint leaves (minced)
Soft butter
White breads

Action
a!. Mix the mint leaves with butter!.

b!. Spread on thin white bread!.

c!. Trim off crusts and roll!.

If he likes salad dressing, maybe you can consider topping some vegetable dressing to the sandwiches!.

Cucumber Sauce

Ingredients
2 cucumbers
1/2 teaspoon salt
1/4 teaspoon cayenne
1 tablespoon vinegar

Action
a!. Grate the cucumbers, and drain the water away!.
b!. Add salt, cayenne, vinegar, and serve!.

When you prepare meat sandwiches, you may add fine vegetable strips like alfalfa, cabbage, cucumber, tomatoes, and so on!.

When he likes herbs, you may sprinkle chili powder, oregano, sage and so on!.

When he is having beef, he can sprinkle black pepper and a little salt!.

You may warm the sandwich with a keep warm container!. At least it won't be so cold, in the cold days!.

Chicken Salad

1 can chunk chicken, drained
1/4 cup chopped pecans
1 medium apple, diced
Mayonnaise to taste
Lettuce leaves

Mix chicken, nuts, apple and mayonnaise together!. Place on lettuce!. You can use leftover grilled chicken as well instead of the canned chicken

Shredded Pork Sandwiches

Ingredients-
1 (4 pound) boneless pork shoulder roast
1 1/4 cups ketchup
1/2 cup water
1/2 cup chopped celery
1/4 cup chopped onion
1/4 cup lemon juice
3 tablespoons vinegar
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1 1/2 teaspoons ground mustard
1 teaspoon salt
1/2 teaspoon pepper
12 hamburger buns, split


Preparation-
Place roast in a Dutch oven or large kettle!. In a bowl, combine the ketchup, water, celery, onion, lemon juice, vinegar, Worcestershire sauce, brown sugar, mustard, salt and pepper; pour over roast!.
Cover and cook over medium-low heat for 4-6 hours or until meat is tender and pulls apart easily!. Shred meat with two forks!. Serve on buns

How about egg salad sandwiches!? They are inexpensive and easy to make!. If you need a recipe, hit me up!.

Does he like chicken salad sandwiches!? also easy and a good way to get rid of leftover chicken!. I like to slice grapes in half and add to my chicken salad but he might not like that!. haha!.

If you cook a roast for dinner one night, slice some leftover beef for a nice sandwich!. Leftover meatloaf is good as well!.

Does he like anything like potato salad, macaroni salad, or seafood salad!? Sometimes something like that is good to make (or even buy) for a change!.

Maybe you could get a Thermos and put some soup or chili in it!. You can even cook a hot dog and put it in a Thermos full of hot water and it will stay hot until he's ready for lunch!. Friends of mine used to take them into the baseball stadium that way!. Www@FoodAQ@Com

I don't know what types of food he likes, so some of these ideas may not work!.!.!. but I'll just rattle off a bunch of them!. I used to pack bagels with cream cheese, tortillas with cheese melted in them and salsa (even cold I love it)!. I loved packing cheese and crackers, chips and salsa, pasta salad (you can add so many different things to it), I love just rolling up turkey and cheese or for a "brown bag" breakfast I used to scramble eggs and roll them into the slices of ham and cheese!. Trail mix is a good option!. You could also pack interesting types of sandwiches!. I love pizza sauce, mozzarella, and pepperoni in a tortilla!. But if he won't eat a wrap even like that you could just try making a turkey sandwich but making a "fancy" mayo!. Like mixing in garlic or horseradish or something!. The same can be done to mustard!. I make an awesome cold pasta with bowtie, tortellini, broccoli, cauliflower, sun dried tomatoes, artichoke hearts, parmesan & italian dressing!.

Or what about you step up your sandwich making skills!? Instead of tuna, why not make him an italian sub in the morning with pepperoncini, salame, ham, mortadella, shredded lettuce, tomato, italian dressing!.

You could even do like a panini with a chicken breast & cheese grilled!. That tastes fabulous still at room temperature with a shredded carrot salad with walnuts & vinegarette!.

I also love rotisserie chicken cold!. I'm not a big fan of macaroni salad but others seem to like it with chicken!. Www@FoodAQ@Com

Use a thermos and you can make casseroles, hearty soups, pastas or other hot stuff!. It opens a whole new world of stuff!.
As for making sandwiches, try using different types of fancy breads to spice it up!. Foccacia bread, ryes, cheese bread!. Some lettuce or dark greens or spinach to offer alternatives!. Try a BLT!. Montreal Meat is a nice change with mustard!.
Bagels make nice sandwiches too!. Muffins are a great addition to the lunchpail and can be eaten as a snack if he's the type to get hungry!.

Try plain sandwiches!.

Two slices of bread with a filling and some seasonings!.
eg
Tomato with ground black pepper and salt!.(remove seeds or they will be soggy!.

Mashed soft boiled egg!. seasoned (curried, optional)

Cooked lamb with mint jelly, sauce, or Chow chow pickles!.

My mom makes something one day for dinner, put the leftovers in the fridge, give it to my dad for his lunch!. He's happy with them!. Just don't put like, stuff that smells, it'll be around him all day, and if it stinks, not good!. !. !.Www@FoodAQ@Com

Maybe a burrito, hamburger meat with diced potatoes then add diced tomatoes/green chilies by (RO-TEL) mix together, put in a flour tortilla add cheese and hot sauce, and desert pretty much anything!.Www@FoodAQ@Com

Make meat turnovers! They are so good and filling, and you can put whatever you like in them! I use an easy pizza dough recipe from an old Betty Crocker cookbook for the crust!. It takes 15 minutes, and makes six nice, big turnovers!. About 1/2 to 3/4 pound of your appropriate meat plus veggies and maybe some cheese and salt and pepper are all it takes!. I've made hamburger with jack cheese and green peppers, ham with bell peppers and cheese, leftover roast beef with potatoes and freshly ground pepper!. In other words, clean out the refrigerator!. Right now we've got beet greens, and if you haven't tried greens, you're missing a lot!. Have fun!

Wraps made with tortillas can be so much more creative for lunches!. Try them with peanut butter and jelly, grilled chicken with salad dressing and cheese, assorted deli meats and cucumbers, tomatoes, and so many other interesting ideas!. Roll them up and then roll them in tin foil!. In a lunch bag with an ice-pack-they will stay all day!. You may want to place the wrap also in a zip lock so water does not leak through the tin foil!

When my husband was farming and we had 3 sons who frequently had to go to the field to work after school, I made my own buns, bought/prepared a variety of sandwich fillings, baked 3-4-5 different kinds of cookies - all this took at least a day of preparation!. Then I made lunches for the freezer!. Each one had 2 different sandwiches and 2 different kind of cookies!. Then, as they went out the door, they could grab a bag from the freezer and each one was different!. I also made 5-6 different casseroles that we all like and froze them in styrofoam soup bowls!. The boys would come home from school, put a bowl of their choice in the microwave, run upstairs to change to work clothes, pour a glass of milk and butter a slice or 2 of bread and they had a complete meal before going out to work!. Then I didn't have to worry about them being hungry and they could have a snack when they got home!. It worked very well for us for many years!. Economical and tasty!

most people eat fast food for the choices more than the taste!. my husand would eat sandwiches every day as long as i would send something different as a side every day!. potato salad, macaroni salad, veggies and dip!. chips and salsa, and of course a desert!. desert could be anything from pie or cake to fruit or cookies!. the trick is to have the right containers and coolers/insulators!. check out solar cooking sites for ideas on hot foods!. (closed cars make great solar heaters, just for reheating not cooking)

I've packed my husband's lunch everyday for years--it saves so much money and he can eat healthier food too!. The ideas above are great, but don't forget the fried (in our case baked) chicken that tastes great cold too!. And I make pepperoni rolls that my husband loves -- make bread, roll it out thin, cut into smaller rectangles, layer pepperoni and cheese, fold over and seal, and bake!. No need to let rise first, cause they'll rise plenty during baking!. You can also make these with ham and cheese, turkey and cheese, etc, or add peppers, onions, mushrooms, a little spaghetti sauce, a container of something for dip!. Whatever you choose!.

I make iced tea, juice, etc, and pour into plastic bottles and put those in the cooler too!. They are much more refreshing than overly sweetened pop!. By the way, you can fill these up part way, put lids on LOOSELY, and freeze them!. In the morning, finish filling and use in place of the ice packs!. They'll keep the food cold, defrost by lunchtime, and provide a nice cold drink!.

Pack crackers, sliced or chunks of cheese, pieces of meat (ham, pepperoni, etc)!. Goes great with iced tea and grapes!.

My husband loves homemade trail mixes for his daily snacks!. I mix a variety of nuts, dried fruits, chocolate chips (or M&Ms that I get on clearence after holidays), and sometimes some cereal or sesame sticks in a large lidded container!. I put this into reusable small plastic food containers!.

He also likes raw vegetable sticks with a small container of ranch or any type of dip!.

Make your own peanut butter/almond butter crackers at home for a snack!.

Get a wide-mouth thermos, fill with boiling water, set aside for at least 10 minutes to warm, drain, then fill with something hot during cold months!. By warming the container first, it'll keep the food warmer longer--but don't put this into his cooler with an ice-pack!.

And yes, the insulated cooler with ice packs is a must!. My husband'sWww@FoodAQ@Com

Black Bean Empanadas
15!.5 oz can Black Beans
3 tablespoons Tomato Sauce/Crushed Tomatoes
1/4 teaspoon Chili Powder (a little more, to taste)
1/4 teaspoon Salt (optional or just a pinch, I use no salt and increase chili powder to 1/2 tsp)
1/2 teaspoon Dried Oregano
1/2 teaspoon Garlic Powder
little amount Cilantro/Scallions
1 tablespoon Oil
Store bought refrigerated Buttermilk biscuits or reduced fat buttermilk biscuits

Optional:
Milk for brushing
Salsa for dipping

Prepare the filling:
Drain the beans from the can in a colander and wash it under running water!. Mash the beans with a potato masher or a fork!.

In a skillet add the oil and after it heats add the mashed black beans, crushed tomatoes, chili powder, oregano and garlic powder!.

Fry it for 2-3 minutes until all the ingredients combine well!.

Transfer it to a bowl and let it cool!. Stir in cilantro/scallions!. I didn’t have cilantro so I used scallions instead!. The filling tasted very good by itself!.

Preparing the Empanadas:
Preheat oven to 350F!. Grease a large baking sheet!.

I did not cut all the biscuits at once because I did not know if the filling would be sufficient!. So I dealt one by one!. I got 12 empanadas, for the filling, i!.e!., I used 6 full biscuits!. The remaining 2 biscuits I just baked it as it is!.

Remove the biscuits from the pack as the per the instructions and place them either on a floured surface or in the prepared baking sheet so that it doesn’t stick to the surface!.

Cut each biscuit into 2 pieces using a pair of scissors and roll them into balls!.

Roll each piece of biscuit on a lightly floured surface into a 4-inch circle!.

Place about 1 tablespoon filling onto half of each circle!. Brush edges with very little milk!. Fold opposite side of circle up and over filling and seal edges with a fork!.

Place filled turnovers 1 inch apart on the prepared baking sheet, brush with milk!.

Bake in the preheated oven for 10 to 12 minutes or until golden brown!. The aroma was so appetizing!. Immediately remove from baking sheet!. Cool slightly on a wire rack!. We had store bought salsa at home and the turnovers tasted even better when dipped in salsa!.

Freezing Tips:
These turnovers can be made ahead and frozen for later use!. Prepare it as per the above directions!. Let it cool completely on wire racks!. Place in an airtight freezer container; freeze for up to 3 months!. We ate only 6, so I froze the remaining 6 in Ziploc bags!. To reheat, transfer frozen turnovers to an ungreased cookie sheet!. Bake, uncovered, in a 350F oven for 10-12 minutes or until heated through!.

Chickpea Burgers
2 medium potatoes, peeled and cut into 1" pieces
salt to taste
2 teaspoons olive oil
1 small onion, finely chopped
3 cloves garlic, minced
1/2 teaspoon ground cumin
3 tablespoons tomato paste
3 tablespoons finely chopped flat leaf parsley
3 cups cooked chickpeas (garbanzo beans)
freshly ground black pepper
pinch cayenne pepper
about 1/4 cup dried breadcrumbs
cooking spray

1!. Place the potatoes in a large saucepan with 6 cups cold, salted water!. Boil the potatoes until tender, about 8 to 10 minutes!. Drain the potatoes in a colander and set aside!.
2!. Heat the oil in a large, non-stick skillet!. Add the onion, pepper, garlic, tomatoes and cumin and cook over high heat until lightly browned and dry, about 3 to 5 minutes!. Stir in the tomato paste, parsley, chickpeas and potatoes and simmer for a few minutes!. Season with salt, pepper and cayenne to taste!. Let the mixture cool to room temperature!.
3!. Coarsely puree the chickpea mixture in a food processor, adding the breadcrumbs as a thickener!. (Run the machine in short bursts and don't over-process!.) Wet your hands and form the mixture into 8 patties!. Arrange the patties on a plate spread with plastic wrap and chill for at least 3 hours!.
4!. Grill the burgers as described above, spraying the vegetable grate with cooking spray!. Alternatively, arrange the burgers on an oiled, non-stick baking sheet, lightly spray the tops with oil and broil!. To sauté, add a teaspoon or 2 of oil to a non-stick skillet!. Cook the burgers over medium heat until crusty!. Whichever method you use, you'll need about 4 to 6 minutes per side cooking time!. Turn the burgers with a spatula as gently as you can!.
5!. Serve the burgers on rolls with onions, tomatoes, lettuce and your favorite condiments!.

Italian Bean Patties
Serving Size: 1 patty
Yield: 8 servings
2 cups cooked beans
1 beaten egg
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 teaspoons Italian Seasoning
1 cup dry bread crumbs or cracker crumbs
2 Tablespoons cornmeal or all purpose flour
2 Tablespoons vegetable-oil

In a large bowl, mash beans!. Add egg and spices and stir to mix evenly!.

Stir in bread crumbs!. If mixture seems too wet add more breadcrumbs, 1 Tablespoon at a time until mixture resembles meatloaf!.

Shape into little sausages or patties!. Roll in cornmWww@FoodAQ@Com
