Does anybody have a recipe for homemade pasta sauce?!
I have 3-4 tomatoes and some baby tomatoes (Cherry) I suppose, I need to se them before they spoil!. got any recipes to make them into sauce!? Thanks!Www@FoodAQ@Com

Homemade sauce is very simple and I like it better than store bought!. Here's how to make it with your tomatoes:
Chop them up small and do the following:
1) Saute garlic and onion in olive oil in a medium or large pot
2) add the tomatoes
-at this point, if you like your sauce thick add one small can tomato paste and one can water!.!.!. if you like your sauce light with just tomato chunks leave it as is
3) season to taste with the following:
-basil
-pepper
-salt (if you wish, I don't use any)
-thyme
-oregano
-teaspoon of sugar- this is necessary to take away the acidity of the tomatoes, very important!
4) make sure now you turn the heat down all the way as low as it goes without turning if off and let it sit there for a few hours, stirring it occasionally, whenever you think of it!. Keep it covered so it doesn't spatter all over the stove!
5) After a few hours re-evaluate- taste the sauce and adjust the spices to your taste!. If you like it spicy add some crushed red pepper or cayenne pepper!. If it's not thick enough then let it simmer longer!. If it's too thick add some water and stir and cook a little bit!.Www@FoodAQ@Com

OMG I have a great one, and I actually made it up!. :) It's very flexible, so you can add meat or veggies and still come out with a great tasting dish!.
Dice the tomatoes on a plate (so that you can save all their juices)!.
Dice up about 1/2 a large onion!.
Mince about 2-3 cloves (or more if you like it!) of fresh garlic
Opt : Dice up a zucchini or some other green veggie like a bell pepper or asparagus!. You can also add diced cooked chicken!
Heat about 2 tbs or so of butter (or use olive oil) in a skillet and sautee the onions until soft on medium heat!. Then add the garlic and cook for 1 minute!. Add the tomatoes (and optional veggie) and cook for a few minutes, then reduce the heat and let them simmer for awhile, stirring often!. Add about a teaspoon of dried basil, and then salt and pepper to taste!. After 15 minutes or so, the tomatoes will have formed a "sauce" of sorts, that you can pour over your pasta!. Or if you need more liquid, you can a little bit (like a few tablespoons) of chicken broth/stock and let it cook for a minute or two!.
It's very garlicy and yummy! We love it around here! It also goes great served with french bread!.

In large skillet cook sausage until brown!. Drain off fat!. Place sausage in 4-to 5-quart crockery cooker!.
In same skillet cook ground beef, onion and garlic until beef is brown and onion is tender!. Drain off fat!. Add ground beef mixture to sausage in crockery cooker!. Stir in Kellogg's? Rice Krispies? cereal, undrained tomatoes, tomato sauce, mushrooms, Italian seasoning, fennel (if desired) and pepper!. Cover and cook on high-heat setting for 4 to 5 hours or on low-heat setting for 8 to 10 hours!.
Stir meat mixture!. Serve over hot cooked spaghetti!.

Make Ahead Directions
Prepare as above!. Spoon 3-cup portions of the spaghetti sauce into freezer containers!. Cover!. Freeze for up to 3 months!. Before serving, place one portion of the spaghetti sauce into a microwave-safe container!. Microwave, loosely covered, on 50% power (medium) for 5 minutes!. Stir sauce, breaking up any frozen chunks!. Microwave, loosely covered, on 100% power (high) for 3 to 5 minutes more or until heated through, stirring every minute!. Serve as above!.
If desired, substitute 1 teaspoon dried basil leaves, 1/2 teaspoon dried oregano leaves, 1/2 teaspoon dried marjoram leaves and 1/4 teaspoon dried sage leaves for the Italian seasoning!.

If you have any meat, dice it or chop it up and heat it!. Cut all of the tomatoes and add at a 'simmer!.' Add some Italian seasoning, and if you don't have any of that add any or all of the following: Oregano, basil (fresh or dried), marjoram, garlic (fresh or dried), up to a total of 1 tablespoon!. Add 1/2 cup red wine (the less expensive the better) if you have it!. When you are ready to serve or just before, decide if you have enough sauce!. If it's not enough, pour in up to one cup of fat free half and half and use a tablespoon of cornstarch mixed with water so it thickens quickly!. Be sure to add any 'cream' at the very end, and that it thickens quickly!. Don't let it 'boil' after you add the cream, or it will separate and both look and taste nasty!. You may also use some grated parmesan to thicken (we use this instead of cornstarch)!. This is a lovely, light pasta sauce, and it doesn't absolutely require you to use any meat!. If you have any or all of the following you may also add those after you put the tomatoes in: mushrooms (chopped), onion, bell pepper (any and all colors), anchovies (my favorite)!. I onion finely chopped!. - fry in a little olive oil a garlic if you like it!.!. Add your tomatoes chopped and some mixed herbs or oregano!. To make it more exciting add some chopped green pepper and/or mushrooms!. Season to taste with salt and black pepper and simmer till all vegetables thoroughly cooked!.
