Question about bok choy with stir fry?!
Should I use the green part, which is slightly bitter!? or should i Just use the white part which is sweeter!?
or do i use both!?

I like both!.
The green part can be bitter, but it also winds up tasting like mustard!. If you like mustard, by all means include the green!.
And your mom can always push the green part to the side if she doesn't like it!.Www@FoodAQ@Com

I always use both, but the trick to any quick lo-fat stir fry is to blanch the vegetables first!. The green leaf I love just requires a 30 sec 'dip' in boiling water!. ( I cut all the veg about the same size so they all cook about the same time)!.
Then stir fry your "meats" with onions etc and add the veg last with a sauce or stock!. delish!.!.!.!.!.!.Www@FoodAQ@Com

ether way should be okay if you like the taste of the better part and that's where you should do it for yourself but if you're cooking the dinner for your mother then you may need to leave the better part out!.Www@FoodAQ@Com
I use both, but actually before I throw the vegetable into the stir fry I give it a quick blanch, I do not find the green leaf overly bitter!. My wife also likes to use bok choy!.
