I am a former chef and I worked in Japan, while the first young lady's recipe and method is correct, it requires a special pan, I have one purchased in Japan along with one for Takoyaki dumplings, if you do not have one a good sturdy non-stick pan, and the egg prep she said and either trimmed nori sheets or when you roll they will conform!.
Make a series of egg crepes, then stack them alternating with the seaweed or not, roll into a log and then press them into shape I put mine on a plate put another on top and can to weight them done as they cool they sort of glue together, just make sure the omelets are still a bit tacky on top to formulate the binding!.Www@FoodAQ@Com

It's very similar to a scrambled egg preparation!. Use low heat to avoid browning!. A nonstick pan is wise here, brushed with a tiny bit of sesame oil (reg or toasted)!. Dilute well beaten egg with a few drops of water, too, and a drop or two of soy or tamari is a nice seasoning!. Practice helps when cooking eggs; your first attempt may not look picture perfect but you can do it!. Www@FoodAQ@Com
