These are so cute and my aunt has made these every year since I was a little kid!

Candy Cane Cookies
Ingredients: 2 1/2 cups flour
1/4 teaspoon salt
1 cup butter, at room temperature
1 cup confectioners sugar
1 large egg
1/2 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1/4 teaspoon liquid red food coloring
1/2 cup crushed peppermint candy, such as candy canes (a food processor makes quick, albeit noisy work of this)
Instructions: Preheat oven to 350?° F!.

Mix flour and salt together, set aside!.

In a large bowl, with an electric mixer, beat butter until creamy, gradually beat in confectioners' sugar and continue beating until light and fluffy, about 2-3 minutes!. beat in egg, vanilla, and peppermint extracts then lower mixer speed and gradually mix in the flour mixture, beating just until blended!. Remove slightly more than half of the dough from the bowl and set aside!. Add the red food coloring and crushed peppermint candy to the remaining dough and beat until evenly mixed and colored!.


For each candy cane, scoop 1 teaspoonful of the plain dough and 1 teaspoonful of pink dough (tip: a small melon baller will give you about the right amount)!. Roll each dough portion between your hands to make a 4 inch rope!. Twist the ropes around each other like a Barber Pole and shape into a cane shape!. Arrange cookies on a parchment paper lined baking sheet (or a lightly greased baking sheet), about 1 inch apart!.

If dough becomes too soft, refrigerate for a few minutes until it firms up again, and only take out small amounts at a time to speed production!.



Bake for about 8 minutes until firm to the touch!. Do not let the cookies brown!. Cool for a minute before using a wide spatula to transfer the cookies to wire racks to cool completely!. Store in a tightly covered container, separating the layers with waxed paper!.

Trios- I made these last year and brought them to work and coworkers asked me to make them all year and have been waiting for these!. They do require a bit of work but I promise they are SO worth it!

2 1/2 cups all-purpose flour
1 teaspoon salt
2 sticks (1/2 lb) unsalted butter, softened
1 cup sugar
1 large egg
1 teaspoon pure vanilla extract
About 2 tablespoons seedless raspberry jam
About 2 tablespoons apricot preserves
About 2 tablespoons strawberry preserves
Special equipment:a 1/2-inch-thick wooden spoon handle or dowel
Make dough:
Whisk together flour and salt!. Beat butter and sugar with an electric mixer until very pale and fluffy, about 4 minutes, then beat in egg and vanilla!. At low speed, mix in flour mixture in 3 batches just until a dough forms!. Divide dough in half and form each piece into a 6-inch disk, then chill, wrapped in plastic wrap, until firm, about 1 hour!.
Assemble and bake cookies:
Preheat oven to 350°F with rack in middle!. Line 2 large baking sheets with parchment paper!.
Roll 3 separate level teaspoons of dough each into a ball, then flatten each ball slightly (to 1 inch wide and less than 1/2 inch thick)!. Arrange them in a triangle on baking sheet with edges touching in center, then make a deep indentation in center of each round with wooden spoon handle!. Make more cookies, arranging them 1 inch apart on baking sheets!.
Fill indentation in each cookie with about 1/8 teaspoon jam (each cookie should have 3 different fillings), avoiding any large pieces of fruit!.
Bake until cookies are baked through and golden-brown on edges, 15 to 20 minutes!. Cool on baking sheets 5 minutes, then transfer to racks to cool completely!.
Bake more batches on cooled baking sheets lined with fresh parchment!.

1/2 cup butter -- soft
1/2 cup sugar
2 cups cake flour
2 teaspoons baking powder
1/2 cup whipping cream
cherry halves -- glazed, or almond slices


Line baking sheets with parchment paper!. Preheat oven to 350 degrees F!.

In a mixing bowl, cream butter and sugar until blended!. Mix the flour with the baking powder and add to the butter mixture a little at a time!. Blend in the cream until a soft dough forms!. Chill if needed!.

Using 1 teaspoonful of dough at a time, roll into small ball!.s Place on prepared baking sheets!. Press a halved cherry or almond half onto each cookie!. Bake 10 minutes or until very light golden and set!. Cool on the baking pan!. Store in airtight container or freeze!.

Makes 72 cookies!.

Cut out centers on half thee circles!. Bake on ungreased baking sheet at 350 degrees F for 12 to 15 minutes!. Remove!. Put jam on bottom cookes and place rings on top!. Dust with powdered sugar!. Makes about 20 cookies!.
