Is it ok to cover and rise you cinnabon reciepes longer than an hour.. what will happen?!

If you need to let them rest longer than 1 hour, put them in the fridge!. If you leave it on the counter for too long, they will rise too much and not get puffier in the oven, more likely they will deflate and not puff back up in the oven!. Putting them in the fridge slows down the yeast!. Just let them come back to room temperature for a while before baking them!. Www@FoodAQ@Com
I think that you mean letting them rise the second time after you have punched down and shaped or formed and are allowing the second rise rite!?
well If they get over grown they can deflate and go flat as a pancake as you move them to the oven!. or they can go flat in the oven or
