CHOCOLATE FUDGE CAKE

3 squares unsweetened chocolate
2 1/4 c!. sifted cake flour
2 tsp!. baking soda
1/2 tsp!. salt
1/2 c!. (1 stick) butter
2 1/4 c!. firmly packed light brown sugar
3 eggs
1 1/2 tsp!. vanilla
1 c!. dairy sour cream
1 c!. boiling water
Chocolate Fudge Frosting (recipe follows)

Melt chocolate in a small bowl over hot, not boiling, water; cool!. Grease and flour two 9 x 1 1/2 inch layer cake pans; tap out excess flour!. Sift flour, baking soda and salt onto wax paper!.
Beat butter until soft in large bowl!. Add brown sugar and eggs; beat with mixer at high speed until light and fluffy, 5 minutes!. Beat in vanilla and cooled melted chocolate!. Stir in dry ingredients alternately with sour cream, beating well with a wooden spoon after each addition until batter is smooth!. Stir in boiling water!. Batter will be thin!. Pour at once into prepared pans!.

Bake in moderate 350 degree oven for 35 minutes or until centers spring back when lightly press with fingertip!. Cool layers in pans on wire rack, 10 minutes; loosen around edges with a small knife or spatula; turn out onto wire racks; cool completely!. Makes 12 servings!.

Make Chocolate Fudge Frosting!. Put 1 cake layer on a serving plate; spread with about 1/4 of frosting; add second layer, spread remainder on side and top of cake, making swirls with spatula!.

1/2 c!. milk
2 tsp!. vanilla

Combine chocolate and butter in small, heavy saucepan!. Place over low heat, just until melted!. Remove from heat!. Combine 10X sugar, milk and vanilla in medium bowl; stir until smooth; add chocolate mixture!. Set bowl in pan of ice and water; beat with wooden spoon until frosting is thick enough to spread and hold its shape!.

CHOCOLATE TRUFFLE TORTE
Torte Ingredients:

1/2 cup LAND O LAKES? Butter, melted
8 (1-ounce) squares semi-sweet baking chocolate, melted
1/2 cup powdered sugar
4 eggs
1/2 cup very finely ground almonds
1/2 cup LAND O LAKES? Sour Cream
1/4 cup all-purpose flour

Frosting Ingredients:

4 (1-ounce) squares semi-sweet baking chocolate, melted
2 tablespoons LAND O LAKES? Butter, melted
2 tablespoons honey

Sauce Ingredients:

1 (10-ounce) package frozen raspberries in syrup, thawed
2 teaspoons cornstarch


Heat oven to 350°F!. Grease 9-inch round cake pan!. Line with aluminum foil, leaving excess foil over edges; grease foil!. Set aside!.

Melt 1/2 cup butter and 8 squares chocolate in 1-quart saucepan over low heat, stirring constantly, until smooth (2 to 3 minutes); set aside!.

Combine powdered sugar and eggs in large bowl!. Beat at high speed, scraping bowl often, until light in color and foamy (4 to 5 minutes)!. Add all remaining torte ingredients!. Continue beating, scraping bowl often, until well mixed!. Add chocolate mixture!. Continue beating, scraping bowl often, until well mixed!.

Spread batter into prepared pan!. Bake for 30 to 35 minutes or until firm to the touch!. (DO NOT OVERBAKE!.) Cool on wire cooling rack 30 minutes!. Remove from pan by lifting aluminum foil!. Remove aluminum foil; place onto serving plate!.

Place all frosting ingredients in 1-quart saucepan!. Cook over low heat, stirring constantly, until melted and smooth (2 to 3 minutes)!. Frost top and sides of torte with chocolate mixture!. Refrigerate at least 1 hour or until firm!.

Meanwhile, press raspberries through fine wire strainer; discard seeds!. (Strain raspberries again, if seeds still remain!.)

Place strained raspberries and cornstarch in 1-quart saucepan; stir with wire whisk until combined!. Cook over medium heat, stirring constantly, until mixture comes to a full boil (5 to 6 minutes)!. Boil, stirring constantly, until slightly thickened (2 to 3 minutes)!. Cool 5 minutes; stir!. Cover; refrigerate until serving time!.

Pastry:
1 cup all purpose flour
? cup sugar
1 t grated lemon rind
? t vanilla
1 egg yolk
1 stick butter softened

Mix all ingredients by hand until well blended!. Use a little cold water if necessary to make workable dough!. Chill 1 hour!.

Filling:
2? pounds cream cheese at room temperature
1? cups sugar
? t vanilla
3 T flour
5 eggs
1? t grated lemon rinds
? cup heavy cream

Mix all ingredients with mixer adding eggs one at a time!. Beat until mixture is extremely smooth!. Use 9” spring form pan!. Butter bottom and side!. Use about ? of chilled dough and roll to about ?” thick to fit bottom of pan!. Bake at 400° for 15 minutes!. Remove and cool!. Place top of pan on bottom!. Roll remaining dough and fit around sides!. Press so that sides are covered!. Pour in cheese mixture!. Bake at 500° and continue baking 1 hour!. Let cool gradually!. Remove pan sides to serve

INGREDIENTS:
1 1/2 cups graham cracker
crumbs
1/2 cup white sugar
1/4 cup butter, melted
5 (8 ounce) packages cream
cheese, softened 5 eggs
2 egg yolks
1 3/4 cups white sugar
1/8 cup all-purpose flour
1/4 cup heavy whipping cream

DIRECTIONS:
1!. Preheat oven to 400 degrees F (200 degrees C)!.
2!. Mix the graham cracker crumbs, 1/2 cup of the white sugar, and the melted butter together!. Press mixture into the bottom of one 9 or 10 inch springform pan!.
3!. In a large bowl, combine cream cheese, eggs and egg yolks; mix until smooth!. Add the remaining 1 3/4 cups white sugar, the flour and the heavy cream!. Blend until smooth!. Pour batter into prepared pan!.
4!. Bake at 400 degrees F (200 degrees C) for 10 minutes, then turn oven temperature down to 300 degrees F (100 degrees C) and continue baking for 1 hour, or until filling is set!. Let cheesecake cool, then refrigerateWww@FoodAQ@Com
