Just got given a pheasant and have no idea what to do with it?!


Question: Just got given a pheasant and have no idea what to do with it!?
The boyfriend got given a pheasant from a nice old lady at work, she shot it herself the day before yesterday and is fresh, skinned and gutted!. Only problem is, I've never cooked pheasant, and have no idea what to do with it!. So here are my questions to you!.

Do I hang it!? What does hanging do, exactly!?
What's the best way to cook my pheasant!?
Recipe ideas and accompaniments would be very helpful too!.

If it is already skinned and gutted it is too late to hang!. Hanging is done with the whole carcass and allows the flesh to become tender and it develops the strong flavour that many people like!. You could cut yours up and roast the breasts larded with plenty of bacon or pork as the meat is rather dry on its own, and make a caserole out of the legs!. Alternatively you could just make a casserole out of the lot!. Don't forget to make a delicious soup or stock from the bones, and be warned there may still be little pieces of shot in the meat!. A pheasant isn't a huge bird so depending on your appetites and the size of the bird, one pheasant will serve two to four portions!. Bon appetit!.Www@FoodAQ@Com

Ive only ever cooked one but I treated it like a wild duck!. O stuffed it with a cut up orange, cut up onion, some fresh sage and rosemary and a half dozen prunes!. Then I oven roasted it in a covered pan with 1/2 bottle of red wine for a liquid!. Since mine was wild shot it was a bit tough but darn tasty!.Www@FoodAQ@Com

I think you hang it until it begins to rot!.!.!.it's supposed to make the meat tender I think!.

They do it a lot in England, I live there at the moment but I'm not English!.!.!.!.my husband shoots and sometimes brings pheasant home, I never hang it though!.

I usually casserole it!.!.!.!.I just find it easiest!.
