Jellied eel (what kind of eel do i need )?!


Question: Jellied eel (what kind of eel do i need )!?
Mt neighbours have been fishing and presented me (as a chef) with a new zealand sea eel of about one kilo or so I was thinking I might smoke it but then I thought, I have never made jellied eel and maybe I should give it a try !.any tips on cooking it !? is this fish suitable for jelly !? love to hear from someone more familiar with eel !. cheers !.Www@FoodAQ@Com

You need silver eel!. They are common around the UK shores in the summer months!. Most of them that are trapped in the UK are sold to the Dutch!. They pay more for them !. We get tons of them down here in Poole harbour Dorset!. We just boil them, and chop them up and add gelatin and seasoning!.Www@FoodAQ@Com
