Can you freeze shortcrust pastry successfully?!


Question: Can you freeze shortcrust pastry successfully!?
I've made up a large quantity of shortcrust pastry to make mince pies and have some pastry left over and not enough time to cook the rest of it!. Can I freeze it in one lump!. I've looked in my freezer book and that suggests I roll the pastry out and freeze it in thin layers!. As you can buy frozen shortcrust pastry in blocks, is there any reason I can't freeze home made pastry the same way/Www@FoodAQ@Com

Oh yes!! Which is just as well, as when I do make it, I'm never too sure it will come out ok!. So when it does, I like to freeze what I've made so I can use it again!.
Wrap it tightly in cling film to keep any air out, foil doesn't quite do it!. It is better if it is rolled out to the size it will be used when thawed but not essential!. If it is thoroughly thawed, it can still be used as it was when made!.

I often freeze left over pastry, not in a lump though!. I roll it out to the shape and size I want and freeze it flat!.

As you say, if you can buy it in blocks, it should be OK to freeze your own in a lump!. Try it and see, might be an idea to make sure it's well wrapped though to stop it drying out and spoiling!.Www@FoodAQ@Com

I don't see why not!. I presume you've added the water to it so do it as the book suggests!. I've frozen pastry before I've added the water to it and its tasted ok!. JanWww@FoodAQ@Com

yeah im almost positive you can!. the rule is, unleavened pastries you can freeze, otherwise you cant, unless of course its been baked!Www@FoodAQ@Com
