Can truffles be frozen?!


Question: Can truffles be frozen!?
I was wanting to get a head start on my holiday baking, and was wanting to know if truffles can be frozen!? If they can be, what length of time can they be frozen!?Www@FoodAQ@Com


Answers:
Yes and No!.

If they have a chocolate outer shell then freezing them will make the chocolate turn ugly, but they are still edible!.
You could freeze the ones with say a powdered sugar or cocoa outer, but you might have to cover them again!.
Or better yet, just freeze the cream part, as in make your cream, form it into the balls, freeze them and then when you are ready to give them away, roll them in cocoa of dip them in chocolate!. This way they should keep for up to three months!.

However, if you are trying to give them away for christmas then you would not have to keep them frozen in the first place, just store them in the fridge!. They will definitely be okay until christmas!.

I assume your truffles will be rolled or dipped in something, so you might be able to freeze and thaw them before you put on the powdered sugar or cocoa coating!. The problem with freezing chocolate is condensation can cause whitening or discoloration!. Dipping after thawing might be the answer!. Good luck!.Www@FoodAQ@Com
