I don't even use a recipe for quiche any more!. I always use a ready-made pie crust!.
I'll saute chopped onions, maybe some garlic, add some chopped red or green pepper and cook until it's all softened!. I grate a fairly sharp cheese, usually a cheddar, until I've got about a cup of it!. Sometimes I'll cook a box of chopped broccoli or spinach (drained completely or the quiche is too liquid), sometimes not!.
If I use a meat or seafood that needs cooking or chopping, I take care of that while the stuff sautes!. I use about 1 cup of ham, crab, chicken, whatever!.
I mix all the non-egg ingredients and arrange them on my pie crust, which I unroll in my own pie plate!. I beat enough eggs, or a mix of EggBeaters and eggs, in a 2 cup measuring cup until the level is about 1 cup if the quiche is pretty full from the other ingredients, 1!.5 if there's plenty of room!. (Whether I used the broccoli or spinach makes a difference!.) I top off the cup with milk to the 1!.5 cup level if the quiche is pretty full, 2 cups if it has room, stir to mix, and pour it over all carefully!. Sometimes I top it with a little more cheese!.
Bake at 350 for about an hour!. Blot off any liquid or oil with paper towels!. Let it stand for five minute before slicing!.
