Any special tricks for better flavor? Beans and Ham Hock in Crockpot?!

Question: Any special tricks for better flavor!? Beans and Ham Hock in Crockpot!?
So I haven't done this in years but I am going to make Beans and Ham Hock in my crockpot!. I have always just added the beans, ham hock, bay leave and water to the crockpot and let it cook for many hours!. Anything else I can add to kick up the flavor a bit!?

This is the first time I am making it for my husband so I want to make sure he loves it!.

Ham (or any kind of pork, even a bone) goes with beans so well!. Its like they were made to go together!

I think I might add an onion, cut roughly in big pieces!. Or a couple of tablespoons of molasses!. Salt only at the end, it tends to make the beans tough if you put it in at first!.

If you wanted to go to the trouble, you could take out the ham hock at the end and take the meat off it and put the meat back in the beans!.Www@FoodAQ@Com

I always cut up a few potatoes in with it!. They absorb the salt from the ham and add their fresh flavor to the broth of the beans!.

I am not a fan of bay leaf with ham, I stir a couple of tablespoons of good mustard in the water which I pour into the slow cooker!.

We like cornbread with this and lovely brown cinnamony Apple Butter!.

Hmmm! This has got my mouth watering! What time are you serving!?
