How do you make chicken-fried steak?!

It's a bit time consuming, but it tastes just wonderful!. Our family only has it about twice a year!. I don't really have a recipe, but I will list here how I make it:
1 pound sirloin, cut into about 4 equal portions -- using a mallet or the sharp edge of a plate, pound steaks until about 1/4 inch thick!. Rub salt and pepper into each side of steaks, pound some more!. This will tenderize and season!.
In a large bowl, combine 1 1/2 cups all purpose flour, 1/2 t!. salt, 1/4 t!. pepper and 1/16 t!. paprika!.
In a large bowl, pour about 1 1/2 cups buttermilk!.
Lay out a cooling rack, similar to something you would use to cool cookies or cakes!.
Prepare a large heavy skillet with about 1 1/2 cups of vegetable oil!.
Dip steaks in buttermilk, dip in flour mixture, dip in buttermilk, dip in flour mixture!. Place on rack to dry!. Let dry at least 10 - 15 minutes!.
Meanwhile, heat oil in skillet to 350 degrees over medium high heat!. Once oil is heated, carefully place breaded steaks in skillet!. Fry for about 3- 5 minutes or until very brown and crispy!. Carefully turn over and let fry another 3 - 5 minutes or until very brown and crispy!. Transfer cooked steaks to platter lined with brown paper bags -- do not use paper towels!.

Okay I am going to go on a different route here and actually post a recipe not a bunch of links!.
When I make my chicken fried steaks I use cube steak, and then pound it out just a tad bit more!.
Then I make up this flour!. I keep this on hand as it is good for chicken fried steaks, fried chicken, chicken strips, onion rings etc!.!.!.
8 cups flour
2 tbsp onion powder-or onion salt if you don't mind the extra sodium
2 tbsp celery salt
2 tbsp poultry seasoning
2 tbsp white pepper
2 1/2 tbsp regular salt
Mix well and keep remaining flour in an air tight container!.
Dip the steak in water, then the flour mix, and repeat!. Then pan fry in oil or butter or a mix of both!. Remove steaks to a paper bag lined plate and cover with foil!.
Depending on how much flour you have in the oil then sprinkle in just a bit more and make a roux!. Then add evaporated milk and chicken broth alternatly until you get the deisred consistency!. Let the gravy thicken a bit between each addition!.
If youuse the drippings from the steak you most likely wont need to season the gravy anymore but taste and see what you think and season accordingly!.Www@FoodAQ@Com
