Step1

This recipe is for using 1 lb!. of fresh chestnuts!. Soak the nuts in warm water for several hours or even overnight to soften the shells!. Remove from the water and dry!. With a sharp paring knife, make a X on the flat side of the shell!. Make sure you cut all the way thru the nut as steam can build in the shell and explode!.

Step2

Heat oven to 375!. Lay the nuts on a baking dish or a cookie sheet and bake for 25 to 30 minutes!. After baking, remove pan and wearing a pair of oven mitts or even leather gloves, begin to peel the nuts while they are hot!. The nuts will have split open where you cut the X and the skin should remove fairly easy with the paring knife!.


Step3

When the nuts are all peeled, melt the butter in a large skillet, preferably a cast iron skillet, and add the nuts!. Sauté until the nuts are well coated with the butter!. Lightly add salt and a pinch of cinnamon or a little garlic salt!. Put the skillet into the oven until the nuts are golden brown, about 10 minutes!.
