Question: Short bread cookie question for a newbie! :D!?
do I need corn starch or baking powder for short bread cookies!? I am making them for christmas and got a recipe from a friend and it never mentioned baking powder or corn starch The recipe she gave was too small so I was looking another up and now its asking for ingrediants I dont have:( do I need it !? and does anyone have a large recipe foir short bread cookies ( I am making them as christmas gifts for about 10 people maybe giving out 15 each !? what do you think I have nice boxes to put them in as well :) * anyways back to teh main question haha can some one give me a nice short bread recipe enough for maybe 50 cookies at a time !? Shortbread cookies normally don't call for leavening (baking powder or soda) but some variations call for cornstarch!. It gives a delicate crumb to the cookie!.

Shortbread (50 servings)

INGREDIENTS:
2 cups and 1 tablespoon butter
1 cup and 1 tablespoon confectioners' sugar
4 cups and 2 tablespoons all-purpose flour
1/2 teaspoon salt

DIRECTIONS:
1!. Preheat oven to 350 degrees F (175 degrees C)!.
2!. In a large mixing bowl, cream the butter and the sugar!. Slowly add the flour and salt, mixing well!. Roll out dough with a rolling pin until it is 1/4 inch thick!. Cut into desired shapes using cookie cutters!. Place on cookie sheet and prick with a fork!.
3!. Bake for 5 to 8 minutes, or until light brown at the edges!.Www@FoodAQ@Com

Definatly wont need cornstarch!. Don;t really know of any cookie recieps that call for cornstarch!.

never heard of using cornstarch in corn bread!. but you can use baking powder!.

You shouldn't need anything but the following:
Butter, sugar, plain flour!. Vanilla essence is optional!.

If the recipe your friend gave you is "too small", just increase the quantity of ingredients!.

For example: if the recipe states that it "Makes approximately 2 dozen cookies" and you need 4 dozen cookies, then double the recipe!. Bear in mind that it depends on what size cookies you make too!.

Here's my "tried and true" shortbread recipe!.

250 grams (8 ounces) butter (at room temperature, cubed)
1/2 cup sugar
2 cups plain flour
1 teaspoon vanilla essence

Using electric beaters, beat the butter, sugar and vanilla!. Gradually add one cup of flour!. Using your fingers, work the other cup of flour into the mixture!. Turn out onto a floured surface and knead lightly!. Roll out the dough until it's about half an inch thick, then cut out shapes using cookie cutters!. (A yummy optional thing to do here is sprinkle the cookies with a little extra sugar)!. Place on a greased oven tray and bake in a preheated 320 F (160 C) oven for approximately 20-25 mins!. Cookies should turn slightly golden when cooked!. Remove from oven and cool on trays!.
Store in an airtight container for up to 2 weeks!.

This recipe makes about 3 dozen cookies when I make it!. If you double this, you'll have plenty!.Www@FoodAQ@Com

Why don't you try once before you do the actual one!? From there you will see how much you can make from the amount of flour!.

I have 2 recipes here!. Maybe you try a small amount, then you decide which one to go with the gifts!?

Shortbread One

Ingredients
1000g flour
450g butter
250g fruit or brown sugar

Action
a!. Sift flour and sugar!.

b!. Rub in butter until smooth!.

c!. Roll out 2 cm thick and cut,
in squares or with fancy cutter!.

d!. Bake in 180°C or 356°F oven,
for about 30-40 minutes!.

Shortbread Two

Ingredients
625g flour
250g sugar
250g butter
3 eggs
1/4 teaspoon lemon essence
1/2 tablespoons salt
1 piece candied lemon peel

Action
a!. Mix all in a bowl, and make 4 portions out,
of 120g dough!.

b!. Mold them into 4 round forms, then roll them out,
into 4 oval shapes!.

c!. Pinch them around the edges!.

d!. Put the lemon peel at the top, and bake 1 hour,
in 150°C or 302°F oven!.
