Hi, for Christmas dinner this year more adults than children, so time to do something fancy for a change! What's your favorite appetizer that I can make fairly easily for the starter!?

Cherry-Pomegranate Chutney
1 Tbsp!. olive oil
2 medium onions, chopped (1 cup)
1 Tbsp!. grated fresh ginger
2 cloves garlic, minced (1 tsp!.)
1/4 tsp!. ground cinnamon
1/8 tsp!. ground allspice
1 12-oz!. pkg!. frozen dark sweet cherries
1/2 cup unsweetened pomegranate juice
3 Tbsp!. sugar
Seeds from 1 small pomegranate (3/4 cup)
1/4 tsp!. salt
Directions
1!. In large nonstick skillet heat oil over medium heat!. Add onions, ginger, and garlic!. Cook, about 5 to 6 minutes, stirring occasionally, until tender and translucent!. Stir in cinnamon and allspice; cook about 15 to 20 seconds, until fragrant!. Add cherries, pomegranate juice, and sugar!.

2!. Increase heat to medium-high!. Bring onion-cherry mixture to boiling!. Reduce heat to medium-low!. Simmer, uncovered, about 30 minutes, stirring occasionally until onion-cherry mixture is thickened!. Remove from heat!. Stir in pomegranate seeds and salt!. Refrigerate chutney, covered, up to 1 week!. Makes 1-3/4 cups
Serve with crackers and a wegde of brie

Prosciutto Pinwheels
What you'll need:
- puff pastry sheets (1 package-2 sheets)
- 8 ounces of Prosciutto (thinly sliced)
- Grey Poupon mustard (to cover)
- 8 ounces of Provolone cheese (grated)
- 4 ounces Parmesan cheese

What to do:
First thaw the 2 pastry sheets and roll with a rolling pin into a 14 x 14 inch piece each!. Then, spread a thin layer of mustard on each sheet of pastry!.

Next, divide the Prosciutto in half and place on each sheet!. Divide the cheese in half and place on each sheet!. Next, roll each sheet into a tight roll and pinch the seams together!.

Slice into 1/4 inch slices and place on an ungreased cookie sheet!. Bake for 10-12 minutes at 425 degrees F and serve warm or at room temperature!. Deeeelish!.

Ahi Carpaccio
1/2 lb Fresh tuna, paper-thin
Salt, Vinegar & Oil
Freshly cracked pepper
1 Bunch arugula
Grated Parmesan cheese
1/2 Wht or blk truffle; shaved




Instructions

Note: May use a greater amount of truffle if desired!.


1!. Arrange tuna in overlapping slices on platter!. Sprinkle with salt and drizzle with oil and vinegar to taste!. Sprinkle with pepper!. Surround tuna with wreath of arugula!. Sprinkle grated Parmesan cheese over all!. Top with truffle shavings!.

Cheese with Shrimp and Brandy - serves 6

6 ounces Monterrey Jack cheese shredded
6 ounces Mozzarella
1/2 cup shrimp cooked and chopped
2 tsp fresh oregano minced
Poblano chili strips for garnish
Minced green onions for garnish
Toasted pine nuts for garnish
2 tbsp cognac
6 flour tortillas

Combine cheeses!. Divide shrimp equally into 6 individual ramekins!.
Top with shredded cheese and sprinkle with fresh oregano!.
Place in preheated 350F oven and bake just until cheese has melted!.
Place on heated serving plates and garnish with chili strips, minced green onions, and toasted pine nuts!. Drizzle each with teaspoon Cognac and drape with a hot flour tortilla!. Serve immediately!.
