Anybody that told you that you can make a stainless steal pan non stick by seasoning it is WRONG!. You can season a carbon steal pan (like a wok) or a cast iron pan but stainless cannot be seasoned and should not be oiled after using!.

An expensive stainless pan is meant for heat distribution and probably has multiple layers and some inlaid copper!.

I love my stainless pans because they DO stick!. When you saute, you get some sticking!. That "fond" of small pieces of browned bits of meat are the makings of a great sauce!.

I have nonstick pans and stainless pans and use them for different things!.Www@FoodAQ@Com

Mark is right!. A stainless steel pan is used for searing and getting a good sauce!.!.because food sticks to it!. You fry one side, pry it away, turn it over and then after a few minutes add some wine, stock or cream or all together for a fantastic gravy!. There is only one way you can make it non stick!.!.put enormous amounts of oil in it!.!.but then you are deep frying!.
Good chefs buy it to create memorable dishes!.!.not out of convenience!. and you will too!.!. after all you realised that good equipment is very important!. And I cant tell you the amount of money I have spend on mistakes or items which were not for the purpose I bought them for!.!.we all life and learn!. At least you bought accidentally a very good gadget!. :-))Www@FoodAQ@Com

Don't put the food in the pan until the oil is hot,

I once heard a chef on the television say " It is better to use a frying pan on medium heat and not a high heat "

Don't know if that will help you though,!?Www@FoodAQ@Com

Don't put your element on high!. The trick is to cook at a lower temp!. than you are used to!. It's the high heat that causes the sticking as well as not enough oil!.Www@FoodAQ@Com

You should always put a little oil in the bottom of the frying pan - I find it helps whether the pan is non-stick or not!. It might help!.Www@FoodAQ@Com

oil it with vegtable oil or cooking sprayWww@FoodAQ@Com

Regularly oil it with veg oil!.!.!.!.!.just like you would a good wok!.Www@FoodAQ@Com
