What are some butter-less deserts I can make?!
I am stuck inside due to an ice storm and I need to come up with some deserts to make for 2 parties this weekend!. Any help please!? Cannot have butter or shortening!.!.!.I have canola oil though!.Www@FoodAQ@Com

cakes are good!. if you have chocolate chips you can make a whipped ganache frosting instead of typical buttercream!.
CHOCOLATE CAKE
* 2 cups white sugar
* 3 cups all-purpose flour
* 2 teaspoons baking soda
* 1/2 teaspoon salt
* 1/2 cup unsweetened cocoa powder
* 2 cups water
* 1 cup vegetable oil
* 2 tablespoons distilled white vinegar
* 1 teaspoon vanilla extract
DIRECTIONS
1!. Preheat oven to 350 degrees F (175 degrees C)!.
2!. In a large bowl, mix sugar, flour, baking soda, salt and cocoa!.
3!. Add water, vegetable oil, vinegar, and vanilla!. Beat by hand until smooth!.
4!. Pour into a 9x13 inch pan!. Bake at 350 degrees F (175 degrees C) for 40 minutes, or until toothpick inserted into center of cake comes out clean!.

* 2 cups semisweet chocolate chips
* 2 cups heavy cream
* 2 teaspoons vanilla extract
DIRECTIONS
1!. Place chocolate chips in a large bowl, or in the bowl of a stand mixer!. Pour the cream into a saucepan, and bring to a boil!. As soon as the cream boils up to the top of the pan, quickly remove it from the heat, and pour it over the chips!. Let stand for a minute or two, then stir with a whisk, or use the paddle attachment for the mixer, to mix until smooth!. Be sure to scrape the bottom of the bowl occasionally!. Stir in the vanilla until well blended!.
2!. Allow ganache to cool until stiff in the fridge!. remove while still cold and whip into a delicious fudge frosting!.
ASSEMBLY
1!. Use half the ganache for the inside of the cake and your basecoating!. use the rest to completely coat your cake in chocolate!. place in fridge for an hour or so!.
2!. using a piece of paper or anything with a snowflake cut out in the center place on top of your cake when firm and set and using confectioner sugar dust liberally on the top!. the top of your cake will then have a beautiful snowflake design on top to give it that christmas touch!.Www@FoodAQ@Com

I'm sorry to say this, but you CANNOT make Christmas butter-less anything!.

Last month I meant to post this but time got away from me so I thought I would do it today!.
I make these Ice Cream Cookies each year for Christmas!. They are soooo good!
I DOUBLE THIS RECIPE!
6 tablespoons softened butter
6 tablespoons powdered sugar
1 beaten egg yolk (important)
1 tsp vanilla
1 cup all purpose flour
candied cherries
Cream butter and sugar, add egg yolk, vanilla and flour and mix well!. Drop by teaspoonfuls onto a greased cookie sheet!. Press one half of a cherry into the center of each cookie!.
Bake at 350 degrees for 15-20 minutes!. You'll get 30 cookies!.
Several years ago, I started also making them at Halloween and shaping them into Monster Fingers!. They look so creepy in the apothecary jar!.!.!.!.!.
For monster fingers:
add a couple drops of green food coloring into the dough!. Then, using a smaller amount of the dough, form it into a cigarette shape!. Then sort of squish it on the pan, using the cherry as the fingernail!. Take a knife and make 4 little slashes where the knuckle would be!.
Here is what they look like before being baked:
Bake the same way!. You'll get 22-24 monster fingers!.

Shortbread Snowballs
Ingredients
2 cups Butter softened
1 1/3 cups Pecans finely chopped
1 cup Sugar
Powdered sugar (for topping)
4 cups Flour sifted
Instructions
Preheat oven to 350 degrees!.
Beat butter until creamy!. Add sugar and beat until blended!. Add sifted flour slowly on low speed!. Chop pecans until very fine (like breadcrumbs) and add to dough!.
The dough will be a crumbly mess but will go together as you break off bits and shape it into 3/4" balls!. Place at least 1" apart on ungreased cookie sheet!.
Cook for approximately 20 minutes, until edges are lightly brown!.
Remove warm cookies from pan and roll in powdered sugar!. Place in cookie tin, separating layers with wax paper!.

how about a no-bake cheesecake!? so easy & good! just mix together 2 8oz pkgs cream cheese (softened), 1 14-oz can sweetened condensed milk, 1/4 cup lemon juice, and 1 tsp vanilla!. pour into prepared graham cracker or oreo crust, let set in fridge or freezer for at least an hour, & voila! you can mix in things like oreo bits or chocolate chips, or top with fruit or caramel or whatever, but it's delicious plain!. enjoy!
(note: if you don't have a pre-made crust, & no butter to mix with crumbs to make your own, just drop oreos or nilla wafers into muffin tins lined with cupcake liners & pour the filling over them for mini cheesecakes!)Www@FoodAQ@Com
