Answers:
Cooking wine is made different I do believe there may be extra salt in it!.Any of a variety of different types of wine that are used to enhance the flavor of food dishes, such as meat, poultry, seafood, stew, vegetables, and sauces, while they are being cooked!. Commerially processed wines are available in food stores as red, white or golden wines and are sold specifically for use in cooking!. This type of wine provides a good shelf stable option that can be kept in a pantry for approximately one year after it has been opened, due to salt being added when the wine is processed!. When used in recipes, the wine may adversely affect the saltiness of the foods, so it is often wise to reduce the amount of salt required, if any, in the recipe to not overpower the food with a salty flavor!. Generally, a Cooking Wine will contain approximately 1 teaspoon of salt for each 8 ounces of wine!. Commercial cooking wines are not made for drinking and contain no alcohol, which would evaporate during cooking if the alcohol was present!.
Table wines, which do contain alcohol, can also be used as a cooking wine and differ from commercial cooking wines by the lack of salt and the limited shelf life after being opened!. However, since the alcohol is removed during cooking, many people keep inexpensive red or white wines available for use as cooking wines!. A common dispute exists for the belief that inexpensive wines do not work as well as more expensive wines for cooking, which has lead many to suggest that a cooking wine should be a wine that one would normally drink!. Since very cheap wines may lack in quality, heating a low quality wine may only serve to increase the poor qualities present!. Select wines that are not the lowest of quality, but certainly not the highest in prices!. Typical table wines with flavors ranging from delicate and dry, to sweet and rich, are commonly used in cooking, which include: red wine, white wine, and fortified wines such as Sherry, Port, and Vermouth!.Www@FoodAQ@Com
