How should I heat chocolate on stove? Tried to make chocolate covered cranberries and it didn't work so well.?!

This will sound silly, but the best way is to use a mixing bowl and an electric heating pad with a thermostat!. Roll a towel up, and lay it in a circle so the mixing bowl fits in it!. Then lay the heating pad in and put the bowl on top so the pad wraps around the bowl!.
This gives you a great deal of control over the heat and allows you to melt slowly!. Anything around 100 degrees will melt chocolate!.
The reason I like this better than the double boiler is that it is difficult to control the temp with a pot of water boiling at 212 degrees when chocolate can go wrong at temps over 145, and even if the temp is perfect, any bit of condensation that falls in the chocolate can cause a mess!.Www@FoodAQ@Com

easiest way is in the microwave!. and its the fastest!. But just like on the stove it can burn!. If it becomes dry its burnt!. You can add some peanut butter to it to make it smoother and 3 table spoons butter, this will help keep it workable but for only about 5 mins then it will be to cool to do much with!. I never heat my chocolate longer than 4 mins at a time and stiring ever minute to keep it from getting bad after the first 90 secs!.Www@FoodAQ@Com
It's usually best to melt chocolate over a double boiler!.!.!.that is a bottom pan contains water and the upper pan has the chocolate pieces in it!. You want the water to be simmering not a rolling boil and the water from the lower pan should not touch the one sitting on top!. Once you see the melting start stirring it!. I totally agree with the first two answers, or my mom buys dark chocolate then puts milk and like a quarter stick of butter on the stove, then lets it simmer then adds the chocolate to it (make sure there's plenty of chocolate)!. I guess it makes milk chocolate lol!. But it's always really good!. It's worth a try!. Make sure to keep the stove on low heat!. Good luck!.Www@FoodAQ@Com

A double boiler!. If you don't have one you can take a normal pan and fill it with water, get the water boiling and put a glass bowl with the chocolate on top of the pan and stir, that way it will melt with out scorching the chocolate!.Www@FoodAQ@Com
