How about a nice curry with chicken and broccoli!? serve it over rice or couscous!. Here's a recipe:
Indian Curry
Ingredients
3 tablespoons olive oil
1 small onion, chopped
2 cloves garlic, minced
3 tablespoons curry powder
1 teaspoon ground cinnamon
1 teaspoon paprika
1 bay leaf
1/2 teaspoon grated fresh ginger root
1/2 teaspoon white sugar

2 skinless, boneless chicken breast halves - cut into bite-size pieces

Chicken and Dumplings!.
Put 8 pieces or more of chicken in a large stock pot!. Add just enough water to cover!. Add salt and pepper, 1-2 tsp!. Bring to boil, turn back heat and simmer, covered for 45 minutes!. When done, take chicken off bone!. Set aside!. To the chicken broth you just made in the pot, add 2 cans of chicken broth (or use boullion cubes) and 2 cans of cream of chicken soup, salt and pepper (taste it first), little sage, grated onion and 2 small stalks of grated celery, and the chicken you took off the bone ( you might only need to use half of it, and use the rest in another meal like a casserole )!. Bring slowly to a boil, stirring frequently, and when boiling, add frozen dumplings or flour tortillas(less expensive) cut into strips and like dumplings!. Dont overstir them!. Let them cook for 5 minutes!. There should be enough leftovers for another meal too!.
You can also add veggies to it except sweet peas!. I didnt like the texture of the peas in mine!. And if you want to put raw veggies like carrots in it, cook them in the broth after the chicken for 15-20 minutes, then add everything else!.Www@FoodAQ@Com

1) FIRST, make some spanish rice with rice, a little sauteed onion, and dash of hot sauce, can of mexican flavored diced tomatoes (or ROTEL)!. Mix together and let sit!.
2) Poach 3-4 chicken breasts by wrapping in tin foil, crimp the edges and bake in oven on 400 for 35 mins!.
3) Open packet and let out steam!. Once cooled a little, shredd up the breasts into a bowl!.
4) What you'll need:
Chicken Breasts
Large Flour Tortillas
1 or 2 Jars of Alfredo Sauce
1 jar of your fave salsa
Jalapenos if you like them
Sour cream
Mozzarella Cheese
Tin Foil and a Baking Pan
Shredded Lettuce, chopped cilantro, more salsa, other toppings you like!!!
5) So, add 1/2 jar of alfredo sauce to the shredded chicken and 2 spoonfuls of salsa!. Throw in some jalapeno slices for extra kick!. Mix together!.
6) Spray your baking dish with non-stick spray or wipe with some oil
7) Put 2-3 spoonfuls of the chicken in each tortilla and roll up!. Put seam side down in baking dish and REPEAT until the pan is full!. About 6 enchiladas!!!
8) Preheat oven to 350!.
9) Mix the rest of the alfredo sauce with 1/2 jar of Salsa!. Pour all of the sauce alllllll oveeerrrrr the enchiladas!.
10) COVER WITH TIN FOIL AND BAKE FOR 30 MINS
11) Remove foil and top the whole pan with mozzarella cheese!. Return to oven for 10-15 mins until cheese melts!. You might want to turn on your broiler feature for 2-3 mins to make the cheese brown a bit!.
12) Serve with sour cream and other toppings!. And have the spanish rice on the side!!!

Place bread cubes in greased 3-quart shallow baking dish!. Mix eggs, milk and vanilla!. Pour over bread!. Cover and refrigerate 1 hour or overnight!. Uncover!.
Bake at 350 degrees F for 50 minutes or until golden!. Sprinkle with confectioners' sugar!. Serve with maple syrup, if desired!.

In a medium skillet over medium-high heat, brown the ground beef with the onion, garlic and green bell pepper!. Drain excess fat!. Stir in the noodles, pepperoni, pizza sauce and milk, and mix well!. Pour this mixture into a 2-quart casserole dish!.
Bake at 350 degrees F (175 degrees C) for 20 minutes, top with the cheese, then bake for 5 to 10 more minutes!.
