Side items for meatloaf?!


Question: Side items for meatloaf!?
I am thinking about making a meatloaf for dinner tonight and I cant decide on any sides to make to go with it!. So if anybody has any ideas please let me know!. thanksWww@FoodAQ@Com

Since meatloaf has not "gravy" I like some kind of cheesy potatoes!. Roasted garlic and cheddar or like a gratin
Beacon Gratin Potatoes

Ingredients:

* 5 cloves Garlic
* 2 cups Milk
* 1 cup Heavy cream
* 1 Bay leaf
* 4 lg Idaho potatoes, about 2 1/2 pounds, peeled
* 3 oz Grated Imported Parmesan
* 3 oz Grated Gruyere
* Coarse salt and freshly ground pepper to taste



Directions:

1!. Cut 1 clove of garlic in half and rub the bottom and sides of an 8-by-8-inch casserole with the cut side!. Rough chop the remaining garlic!.
2!. In a saucepan combine the milk and cream with the bay leaf and all the garlic, bring it to a boil, turn down the heat and simmer for 10 minutes!. Strain the milk mixture and set it aside
3!. Preheat the oven to 350oF!.
4!. Using a mandoline or other vegetable slicer!. Slice the potatoes as thin as possible, approximately 1/16-inch thick!. Layer the potatoes in the pan, sprinkling each layer with some of the cheese and adding a little of the liquid!. Season every other layer with a little salt and pepper!. Continue layering until all the potatoes are used, ending with a layer of cheese and pouring the remaining liquid over all!. Press the finished casserole of potatoes firmly with your hands to saturate all the potatoes, cover the casserole with foil and bake for an hour!. Remove the cover and continue to bake for another 15 minutes, or until the potatoes are very tender!. Serve very hot!.Www@FoodAQ@Com

Cheddar Mashed Potato Bake

8 medium potatoes, peeled and cubed
1/2 cup sour cream
1/3 cup butter or margarine, softened
1 teaspoon salt
1/4 teaspoon pepper
1 cup shredded Cheddar cheese
2 bacon strips, cooked and crumbled
1 teaspoon minced chives

Place potatoes in a saucepan and cover with water; cover and bring to a boil over medium-high heat!. Cook for 15-20 minutes or until tender!. Drain and mash!. Add sour cream, butter, salt and pepper; beat until smooth and fluffy!.
Transfer to a greased 2-1/2-qt!. baking dish!. Sprinkle with cheese, bacon and chives if desired!. Bake, uncovered, at 325 degrees F for 20 minutes or until heated through and cheese is melted!.

Peas with Mushrooms


1 small onion, chopped
2 cloves garlic, minced
2 tablespoons butter
1 (10 ounce) package frozen green peas, thawed
1 (4!.5 ounce) jar sliced mushrooms, drained
1 teaspoon white sugar
1/2 teaspoon salt
1/4 teaspoon dried thyme
1 pinch black pepper


Cook peas according to package directions!. Set aside!.
Melt butter in a skillet over medium heat!. Saute onion and garlic in butter until tender, about 5 minutes!. Stir in the peas and mushrooms, then season with sugar, salt, thyme and pepper!. Reduce heat to low, and cook just until heated through

I usually boil diced potatoes until cooked thorough then drain the water out and put in baking dish with butter, salt, pepper!. Bake in the oven for 15-20 mins on 400 or until the top is a little crispy and slightly browned!. They are so delicious!!! Corn and rolls are a must too!.Www@FoodAQ@Com

The usual mashed taters with gravy and a vegetable is just that, the usual!.

You could try doing a side of spinach, some white rice and crusty french bread!.Www@FoodAQ@Com

Mashed potatoes and lima beans!.!.!. yum!. Try FRYING the Lima beans instead of just putting them in a pan and heating them on the stove!.!. it's very European, doncha' know!Www@FoodAQ@Com
