No!. It should be sliced so thinly that you can read through it!. Okay, that's a slight exaggeration!. If it's rubbery it might be old!. But it should be sliced extremely thinly!. If it's cut thick, you lose the subtle wonderfulness of prosciutto!.

Prosciutto as to be sliced very thin if it's tick you will have difficulty and it will be chewy and rubbery just like if you would chew on a thick piece of bacon , or lard!.

I agree with libbyami, you should err on the side of safety!. I have never had thick prosciutto, it's always been thin-sliced!. It is supposed to be dry-cured and therefore safe!.Www@FoodAQ@Com
