How far in advance can I do the following things?!
I have a big event on Sunday and am making a few salads and chopping veggies for rolls!. How far in advance can I make the following salads:
Potato salad
Pesto pasta salad
Couscous salad
Garden salad
Coleslaw
ANd how far in advance can I chop the following without them going yucky:
Carrot
Lettuce
Tomato
Cucumber
I would love to do as much as possible the day before!.
What absolutely cannot be done that early and really should be done on the day!?

the salads, all but the garden salad, you can do on Saturday or Friday!. Slaw is best if left to sit a few days!. you could do it on Friday for sure!.
Cucumber, tomato, and lettuce, the day you want to use them!.
Carrots, you can cut them pretty much anytime you want!. just seal in an air tight container!. Like, carrots, celery can be done in advance!.
I don't know what coucous salad or pesta pasta salad is!. WE don't eat them!. I sometimes make potato salad 2 days prior also!. Just becaue it, like slaw, is better after the flavors have time to blend!. You could do those Friday!.Www@FoodAQ@Com

Make all your salads even today, but do not put the dressings on them!. They tend to get sort of mushy (the pasta) and yucky!. Have the dressings ready to pour over and stir at the very last minute!.
I chop all veggies a week in advance and stash in zip lock baggies in the veggie drawer!. They will be fine!.
For cole slaw, make your dressing, but buy the bagged pre shredded veggies!. They keep for 2 weeks unopened!. I put all dressings on at the very last minute before setting these things on table or buffet!. The more you can get pre cut in bags from the grocery the better!.
Dressings you make yourself need time to meld so they should be made ahead and stored in jars in the fridge!.
Keep all pastas in zip lock bags separate from other ingredients!. Takes just a few to toss these things together at the last minute!.
My plans are for the hostess, me!, to be calm cool and collected after tossing salads but not spending the whole day in the kitchen!. so I do all chopping and cooking possible the day before!. Tossing everything is the easy part!.Www@FoodAQ@Com

Do your vegetables the night before!. The salads I would make no longer than 3 days ahead!. All of these recipes take very little time!. Make the couscous the day before!.Www@FoodAQ@Com
