Question: Do you substitute cottage cheese for ricotta in your recipes!?

I have, such as lasagna, I run a hand blender through to get the consistency of ricotta!. I really prefer the ricotta though!.Www@FoodAQ@Com

Sometimes I have to in a pinch!. The little grocery store here doesn't carry ricotta, and the nearest Safeway or Wal-mart is 30 miles away!
If I have to substitute, I put the cottage cheese in a double layer of cheesecloth draped over a mixing bowl and let it strain for an hour or so, then I wring the cottage cheese in the cloth, allowing any excess liquid to go into the bowl!.Www@FoodAQ@Com

you can, but strain out the excess liquid, you can actually put in to a paper towel over a bowl and clasp it tight and squeeze out the water, or else it can make your recipe runny and or cause it to not melt in to the rest of your ingredients!. hey Sone, that is a beautiful nameWww@FoodAQ@Com

In Hungary we use "turo" which is "farmer's cheese" in English!. Some people use Cottage cheese in it's place, but it isn't the same!. I don't know much about ricotta (I don't usually use it)!. But I think it's a bit similar to Farmer's cheese!.Www@FoodAQ@Com
