Consistency of dulce de leche?!
I made Dulce de Leche from scratch (milk, sugar, vanilla extract, baking soda) several times!. My question is about the consistency!.
After I put those different batches in a fridge for several hours I got dulce de leche of two different consistencies: few times it became quite hard not spreadable and few other times it was very creamy, but not runny!. Which one is the correct consistency!? How it is suppose to be!?Www@FoodAQ@Com

Dulce de leche is supposed to be the consistency
of thickened sweetened condensed milk!. That is, it should be quite thick but barely pourable and still spreadable!.Www@FoodAQ@Com

it's suppose to be thick and creamy!.
