What should I cook for my husband's farewell?!


Question: What should I cook for my husband's farewell!?
My hubby is leaving for an academy training in Jan and I am making him a farewell dinner!. I will have about 20 people over and I don't know what to make!. He likes meat!.!.but I want to do something different than the norm, and enough for me to feed everyone!. Please help! Time flies and I would like to plan this out! Thank you!Www@FoodAQ@Com

I don't know what the 'norm' is for you, so here are my suggestions!.!.!.

As the first person said, Italian is always good!. You could do a couple of regular lasagna's and a vegetarian lasagna, along with warm garlic bread and a tossed green side salad!.

OR!.!.!.go with a smoked, sliced ham glazed with cranberry/honey sauce, mashed potatoes with sour cream, and corn on the cob!.

OR!.!.!.you could also do something like a pepper steak over rice (Asian style theme)

OR!.!.!.you could do a huge pot of chili and leave the fixins (grated cheddar and sour cream) on the side, served with cornbread muffins!.

Braised Pork Ribs would be great, too!. Not sure where you live, but if you could do these in a smoker or on the bbq, ideal!!

Chicken and Rice is easy to throw together in large pans and easy to serve buffet style!.

You could also do a Stew or Jambalaya of some sort!. Or maybe some kind of seafood risotto!.

So much you can do here!.!.!.!.everything I mentioned is fairly cheap when it comes to feeding a big crowd!.!.!.or at least as cheap as possible when you have to feed so many people!! :)Www@FoodAQ@Com

You might try a smoked turkey!. It feeds lots of people and is out of the ordinary!. I buy mine from an outstanding meat market in the town where I work--they buy fresh turkeys only and have the farmer smoke them the day before purchase!. Drives you absolutely nuts driving home, they smell so good!. Check with a good butcher--this is something you should be able to get where you live!.Www@FoodAQ@Com

What about a good Italian dish!? Include garlic bread or french bread, a salad and his favorite dessert!.Www@FoodAQ@Com

Pan-Seared Pork with Mango Salsa
(serving 20)
5 pounds boneless pork loin chops
1 1/4 cup flour
Salt and pepper
10 tablespoons olive oil
1 1/4 cup diced red onion
1 1/4 cup diced red pepper
5 medium mango, peeled and chopped
2 1/2 cups diced canned pineapple
2 1/2 cups halved grapes
10 tablespoons lime juice
5 teaspoons sugar

On a plate or in a zippered plastic bag, combine the flour with salt and
pepper!. Coat the pork chops in the flour mixture!. Shake off excess!.
In a skillet over medium-high heat, heat the oil!. Add the pork chops and
cook until the pork chops are browned, about 7-9 mins!. Remove from the
skillet and keep warm!. Add the onion and red pepper to the skillet and
saute for 5 mins!.Put the onion and pepper in a bowl!. Add the mangoes,
pineapple, grapes, lime juice, and sugar!. Serve the salsa with the pork!.

DESSERT

PHILADELPHIA Chocolate-Vanilla Swirl Cheesecake (serves 24)

INGREDIENTS (Nutrition)
20 OREO Cookies, crushed
3 tablespoons non-hydrogenated margarine, melted
4 (250 g) packages PHILADELPHIA Brick Cream Cheese, softened
1 cup sugar
1 teaspoon vanilla
1 cup sour cream
4 eggs
6 squares BAKER'S Semi-Sweet Baking Chocolate, melted, cooled

DIRECTIONS
Heat oven to 325 degrees F!. Mix cookie crumbs and margarine; press onto bottom of foil-lined 13x9-inch pan!. Bake 10 min!.
Beat cream cheese, sugar and vanilla in large bowl with mixer until blended!. Add sour cream; mix well!. Add eggs, 1 at a time, mixing after each just until blended!.
Reserve 1 cup batter!. Stir chocolate into remaining batter; pour over crust!. Top with spoonfuls of reserved batter!.
Swirl batters with knife!. Bake 40 min!. or until centre is almost set!. Cool!. Refrigerate 4 hours!.Www@FoodAQ@Com
