I love scalloped potatoes!. Rich, cheesy, hearty!.

-1 1/2 cups heavy cream
-1 sprig fresh thyme
-2 garlic cloves, chopped
-1/2 teaspoon ground nutmeg
-Butter
-2 pounds russet potatoes, peeled and cut into 1/8-inch thick slices
-Salt and freshly ground black pepper
-1/4 cup grated Parmesan
-1/2 cup Cheddar cheese

Preheat the oven to 375 degrees F!.

In a saucepan, heat up the cream with a sprig of thyme, chopped garlic and nutmeg!.

While cream is heating up, butter a casserole dish!. Place a layer of potato in an overlapping pattern and season with salt and pepper!. Remove cream from heat, then pour a little over the potatoes!. Top with some grated Parmesan and Cheddar!. Make 2 more layers!. Bake, uncovered, for 45 minutes!. Sprinkle some more Parmesan and broil until cheese browns, about 5 minutes!.Www@FoodAQ@Com

You can use any cheese you want, if you make a white sauce, then add the cheese to it, and blend it together then pour over the casserole:

In a small, heavy saucepan, melt 2 tablespoons of butter over low heat!.
Blend 2 tablespoons of flour into the melted butter!.
Add 1/4 teaspoon of salt!.
Cook over low heat, stirring, for 4 to 5 minutes!. Cooking for this length of time will minimize 'flour' taste!.
Slowly add 1 cup of milk, stirring constantly!.
Continue cooking slowly until smooth and thickened!.
For thin white sauce, follow the instructions above, but use 1 tablespoon of butter and 1 tablespoon of flour!. Thin white sauce is used in cream soups!.

Add your favorite cheese (about 4-6 ozs) and let it all combine!. Be careful not to scorch it!. Keep stirring constantly!.Www@FoodAQ@Com

I know how to make Potato Pavé!. Slice the potatoes super thin with a mandolin!. Use a square or rectangular shaped pan!. Line with parchment paper to make it easier to remove from pan!. Lay a thin layer of potatoes!. Sprinkle with cheese (your choice different cheeses give different flavors) and salt & pepper!. Repeat!. Similar to making a lasagna!. Once you fill the dish pour in about 1/8 to 1/4 cup cream or milk!. Bake for 1 hour at 350!. Let cool at least 10 min!. Lift pave out of pan using parchment paper!. Slice into squares!.Www@FoodAQ@Com

Slice your potatoes 1/8" thick, & layer with sliced onions in dish!.
You can add sliced mushrooms, if desired; build up layers!.
Pour mushroom soup diluted with milk & water over all!.
Top with grated cheddar or other real cheese!.
Bake covered at 450F for 30 minutes, uncover for 10 more!.Www@FoodAQ@Com
