Question: I need help!!!(she is a *****)!?
yes i would be talking about my mother-in-law!. but any how i need some help i am going to be making duck for christmas for the first time i dont know what to serve with it i dont even know what the orange packet is!! any ideas would be helpful!. i would like to do 5 course meal so my mother in law can say bad **** about it and tell everyone that i made her sick(she did that last year)Www@FoodAQ@Com

Roast Stuffed Duck with Cranberry Orange Sauce
Serving Size: 4 Servings
Ingredients:
1 Maple Leaf Farms Whole Duck, defrosted
3/4 Teaspoon Salt
1 1/2 Cups Celery, thinly sliced
1/4 Cup Onion, chopped
2 Tablespoon Butter or Margarine
2 1/2 Cups Bread Cubes (1/2 Inch)
1/2 Cup Pecans, chopped
2 Tablespoons Orange Juice
1 Teaspoon Sugar
1 Teaspoon Orange Rind, grated
Cranberry Orange Sauce
1 Cup Water
1/2 Cup Sugar
2 Cups Cranberries
1/4 Cup Orange Juice
2 Teaspoons Cornstarch
2 Teaspoons Grated Orange Rind
1/2 Cup Orange Sections
Directions:
1!. Remove neck and giblets from duck!. Rinse duck under cool water, drain and dry skin gently with paper towel!. Sprinkle body and neck cavity with 1/2 teaspoon salt!.
2!. Cook celery and onion in butter or margarine until onion is soft!. Add bread cubes, pecans, orange juice, sugar, orange rind and remaining 1/4 teaspoon salt; toss lightly!. Fill neck and body cavity loosely with stuffing!. Skewer neck skin to back!. Cover opening of body cavity with aluminum foil and tie legs together loosely!. Place breast side up on rack in shallow roasting pan!. Bake in slow oven (325°) until drumstick meat is tender and has reached 185°, about 3 hours!.
3!. To make sauce combine water and sugar in medium saucepan and bring to a boil; boil about 5 minutes!. Add cranberries and cook until they pop about 5 minutes!. Combine orange juice and cornstarch; stir until smooth!. Add to cranberries; cook until clear and thickened!. Stir in orange rind and sections!.
4!. To serve, remove stuffing from duck!. Place duck on large platter and surround duck with stuffing!. Serve with sauce on the side!.


Wild Rice with Slow Roasted Vidalia Onions
Serving Size: 4 Servings
Ingredients:
2 Large Vidalia Onions, unpeeled
1 Cup Wild Rice
3 1/2 Cups Water
1 1/2 Teaspoons Salt
2 Cloves Garlic, peeled
1 Bay Leaf
4 Tablespoons Butter
To Taste Salt and Pepper
3 Tablespoons Parsley, chopped
Directions:
1!. Preheat oven to 350°F!. Wrap each onion in aluminum foil!. Bake for 3 hours or until tender!. Remove onions from foil and peel when cool enough!. Coarsely chop; reserve!.
2!. In saucepan, combine rice, water, salt, garlic and bay leaf!. Bring to a boil; reduce to a simmer!. Simmer for 40 minutes or until rice is tender!. Drain excess water; remove garlic and bay leaf!.
3!. Over high heat, brown butter!. Immediately add rice and onion!. Stir until rice mixture is hot and excess water has evaporated!. Season with salt and pepper!. Garnish with parsley and serve!.


Whipped Sweet Potatoes
Serving Size: 2 Servings
Ingredients:
1 Pound Sweet Potatoes, peeled, cut into 3/4" chunks
1/4 Cup Heavy Cream or Half And Half
2 Tablespoons Butter
1/2 Teaspoon Salt
1/8 Teaspoon Nutmeg
Directions:
1!. Place potatoes in a medium saucepan; add enough water to pan to cover potatoes!. Cover; bring to a boil over high heat!. Reduce heat; simmer covered until potatoes are very tender, about 12 minutes!.
2!. Drain potatoes in a colander!. Add cream and butter to same saucepan; place over low heat and stir mixture until butter is melted!. Return potatoes to pan; add salt and nutmeg!. Using a potato masher or hand held blender, mash potatoes until light and fluffy!.
Note: potatoes may be prepared up to 24 hours before serving!. Cool, cover and refrigerate potatoes before reheating!. Chilled potatoes may be placed in a pastry bag fitted with a large star tip, piped attractively onto a microwave serving plate and heated in the microwave oven just before serving!.Www@FoodAQ@Com

Aww!.!.!. I'm sorry!. My guess is that the real issue isn't the cooking here!.
Probably no matter how good the cooking is, she will still find something mean to say!.
The best thing to do is to cook for yourself and the people you love and not worry about what she says!. You can't make everyone happy!.

As for the duck, I recommend allrecipes!.com!. I think they're the best site out there for recipes!.
I agree with ghost on the red potatoes and snap peas and waldorf salad, but iced tea is really out of season!.
For dessert I think a fruit dish would be good, I love plum cobbler!. Or apple crisp!.Www@FoodAQ@Com

I really wouldn't make anything that you are not totally sure of!. But, If you really want the duck!. I would make potato salad, green beans, a fruit salad, broccoli casserole, or a veggie casserole with rolls and a cheese cake for dessert!.Www@FoodAQ@Com

Your Mother-in-Law must be able to pick up on your bad cooking and negative attitude!. Why don't you include her and ask her to help you !? Duck is a delicate thing to prepare!. You need to have the right baking temp, and preparation is so important to make this duck tender and savory!. With duck you could have a wonderful dressing and the gravy from a roasted duck is wonderful!. You could serve Whipped Potatoes, Scalloped corn, cresent rolls, butter, and serve either pie or dessert!. A good dessert is Cherry Dessert!. Which consists of Whipping cream, melted marshmellows, Cherry filling, and graham cracker crust and sprinkled topping!. If you have a happy , Positive attitude while your preparing, then I know your dinner will be good!.
Roast duck is great, but for meat you have choosen a meat that takes lots of thought!.
Your Husband would be happy if you would include his Mother!. One way to get rid of your husband is to continually pick on his Mother!. Don't ever call him a Mommies boy, because it is an inflicted wound that never heals!. Life is so short!. My Mother-in-Law lived with me!. I treated her like my own Mother!. She always Loved what I cooked and I was good to her!. My husband gave me a Gold Medal for being good to his Mother!. She is gone now and she lived to be almost 100 years old, and I miss her!. She was full Norske and at times she was mean to me, also!. But I did not take it to heart!. You need to have Respect for your Husbands Mother!. Your attitude shows even if you think it doesn't!. The Old Women, can pick up on a Daughter-in-Laws arrogance!. All women are Bitchs!. Someday , you will be called that too!. Make a nice dinner, and ask her to help!.
