Can liver be preserved by drying?!


Question: Can liver be preserved by drying!?
Seems lots of foods can be kept for months by salting or smoking and drying!. Dried smoked fish is my fave BTW!. But can beef liver be dried , salted and stored for some months, or is too perishable!?Www@FoodAQ@Com

I would hesitate to attempt that!. Liver, or any organ meat is very iffy!. It spoils faster than say a slice of beef!. You could attempt it if you sliced the liver in thin pieces and used the oven to dehydrate!. Not the dehydrator, as that process can take days and I would not leave the liver out that long!. Most recipes for oven dried anything calls for the meat to be hung between the slats on the rack by toothpicks and the temp turned down to between 150 and 175 for several hours!. Just be careful and if you think that the liver is in the slightest bit spoiled then trash it!.Www@FoodAQ@Com
