I am a former chef and have done a few in my time, chestnut stuffing is fine with a turkey as it needs richness, goose is all dark meat although a grain feed one will be leaner and not as dark, I have made a traditional Sage and Onion style with sauteed apple and fresh sage, it needs a lighter stuffing, and I would also recommend not to put it in the bird, it get steamed and mushy plus you have fish it out when serving, make it and cook it in a separate dish and serve it at the table for people to help them selves!.

Goose are rather fatty, so make sure to elevate it on a trivet, roasting rack or even a coil made with aluminum foil/paper and make a nest to set it in!. I start mine high to brown the skin and drop it to a lower temp, 400 F or 200 C then to 350 For 165 C, they cook faster than turkeys so a 10-15 goose is done if thawed in 2-3 hours, you test it like a turkey and get an internal temp of 160 F or 90 C!.Www@FoodAQ@Com

Put a chicken inside the goose then put a quail inside the chicken then put a pigeon inside the quail then a lark inside the pigeon!. then stuff the lark with an olive!. That will be the ultimate five bird dish!.Www@FoodAQ@Com

I think a fruit based stuffing would go well with this, try http://www!.bbc!.co!.uk/food/recipes/databa!.!.!. you could substitute the pruness for apricots or some other fruit!.
