When baking i cant get the pastry and wont roll, i have tried adding more flour but then it j?!

Adding flour to your board and rolling pin will help it to not stick!. But to help it to roll, wrap it in plastic wrap and let it "rest" in the fridge to relax the gluten in the dough!. After rolling it out a little and it will start to shrink back up on you you can cover it again with wrap and let it rest again and then finish rolling!. Try not to do much kneading or movement because that is building up the gluten and it will be impossible to roll!.Www@FoodAQ@Com
put flour on top of the pastry and under it!. DO NOT ADD THE FLOUR TO THE PASTRY!. Rolling the pastry in flour helps to make it less sticky, and won't crumble!. also, refrigerate the pastry for an hour before you plan to roll it!. That helps the fat to set up, and makes for easier rolling!.

Your pastry isn't cold enough!. Working it too much is also a big mistake!. If you don't have a pastry cutter use two knives so you are not handling the dough!. Then wrap and get it cold!. When the shortening starts to warm the dough gets sticky so you really need to work faster!.Www@FoodAQ@Com
Don't add more flour to the pastry mixture itself, just make sure you flour the surface of whatever you're rolling it out on, and flour your rolling pin also!.Www@FoodAQ@Com
