Question: What's the best way to roast potatoes (pre-boil or not)!?
I am making dinner for Christmas Eve this year and need to know whether I should pre-boil potatoes before roasting or not!. I don't want the potatoes to be too hard or to get mushy!. THANKS!Www@FoodAQ@Com

There are two types of oven baked/roasted potatoes!. I do not pre-boil either type!. but I do prepare them differently

1) Whole potatoes, I just skewer them with a metal skewer and bake them at 350 for about 45 minutes!. The skewer accelerates the cooking of the inside via the transfer of heat from the metal skewer!.

2) Roasted potatoes, I usually cut to 1 inch pieces and toss with olive oil and herbs (like rosemary or thyme)!. I roast them for about 35 minutes in a 350 oven, turning them once or twice!.Www@FoodAQ@Com

There is no need to boil the potatoes!. Just make sure that they are all about the same size!.

Preheat the oven to 450°!. Choose an ovenproof skillet or roasting pan large enough to hold the potatoes and preheat it in the oven until very hot to prevent the potatoes from sticking!.
In a bowl, toss the potatoes with olive oil, salt and pepper!. Add them to the hot skillet or pan and return to the oven!. Roast for 30 minutes or longer for larger potatoes!. Toss with rosemary or other herbs if desired!.Www@FoodAQ@Com

To get great roast potato's make sure you cook them in fat not oil!. Use a good fat like pork or beef and heat it well in the oven before adding potato's!. I usually cut my potato's into 4 pieces and turn them several times through out cooking so they brown evenly!. I dont pre boil them though you can if you want just shorten the roasting time!.Www@FoodAQ@Com

I don't pre-boil!. Just cut them into 1 in!. cubes before roasting, toss them with some olive oil, salt, pepper, and herbs of your choice, then roast!. The outside will brown nicely and the inside will get soft and fluffy like a baked potato!. Poke one with a fork to test for doneness once they are golden brown!.Www@FoodAQ@Com

I don't pre-boil!. Use fingerling potatoes, or Yukon Golds cut into chunks!. Toss with olive oil, salt, pepper, and rosemary, and roast at 425-degrees until tender, about 20-30 minutes!.Www@FoodAQ@Com

We never pre-boil them at home!. Just cut them into wedges and spray them with cooking spray and bake them like you would do for baked potatoesWww@FoodAQ@Com
