I have a cookies question?!
I have a couple of questions
1!.I have a great recipe for chocolate chip cookies!. I want to know can i use white chocolate chips in the recipe and have it come out the same!. And will it taste good with semi-sweet chocolate Chips!?
2!.I also want to make chocolate chip oatmeal raisin cookies!. Do i have to alter the chocolate chip cookie recipe in any way if i add oatmeal and raisins!?
3!. I want to make checkerboard cookies!. When i split the dough in half and add cocoa powder, do i have to add more sugar to that dough because i used unsweetened cocoa powder!?Www@FoodAQ@Com

1!. Yes, you can substitute white chips!. You do not need to modify the recipe!.
2!. To add raisins you don't need to do a thing!. If you want to add oatmeal just add more milk if the consistency is off!. Sometimes it is and others it is fine!. These are my favorite:

3!. Add about 1!.5 times the sugar the recipe calls for!. So if it calls for 1 cup sugar add 1 1/2 cups!.Www@FoodAQ@Com

1!. Cookies are usually too sweet and semisweet actually tastes better!.
2!. If you add oatmeal you need to reduce flour by the same ratio (but don't replace more than half)!.

You can definitely use white chocolate chips in place of the regular - you could even use M&M's in place if you wanted - or even nuts!.
The cookie will definitely taste good with the white chocolate chips!. You could even do half regular and half white chocolate!. It's always fun to play with recipes to see what creation you can come up with!.
I wouldn't grind up the oatmeal because the texture of the whole oatmeal would be good in the cookie!. I would plump up the raisins first before adding to the recipe and, because of the oatmeal, you might need just a little more liquid in your recipe - like 1-2 T water over what the recipe calls for!. And, depending on how much of the oatmeal and raisins you add, you might want to bump up the leavening just a little - like 1/8 tsp whether your recipe calls for baking powder or baking soda!. That will help the cookie lift up the added ingredients so it won't be flat from the weight of the added ingredients!.
If you want a chewier, moister cookie, use more brown sugar than white sugar - so if your recipe calls for 3/4 cup of each, use 1 cup brown and 1/2 cup white sugar!. For crispier, do it in reverse - 1 cup white and 1/2 cup brown!.
You can also change out the oatmeal for some leftover cereal like Special K or Cornflakes which will give you a crunchy cookie too!. I've done that many times!. I'll make an Oatmeal cookie recipe and just use half to 3/4 of the amount of oatmeal called for and change out the rest for cornflakes!. But you will need to add more of the cornflakes than oatmeal - for instance, if your recipe calls for 2 cups of oatmeal, use 1 - 1 1/2 cups oatmeal and then more than the 1 cup of cornflakes!. I bake one cookie first to see if it goes flat - if it does, add more cornflakes!. Bake another cookie and see if it sets up!. If so, then fill your cookie sheet and bake away!.
